5 tablespoons sweet butter
3 minced garlic cloves
2 cups heavy cream
1/4 teaspoon white pepper
1/2 cup grated parmesan cheese
3/4 cup mozzarella cheese
1/2 cup grated asiago cheese
1/2 cup grated romano cheese
2 teaspoons dried basil

Steps:

  • On medium low, heat the butter in a pot.
  • Add the garlic and pepper. Cook until garlic is golden brown.
  • Reduce the heat to low.
  • Slowly add the cream, stirring continuously until all the cream is in the pot.
  • Simmer the cream for five minutes. Then stir in the parmesan, asiago, romano and the spices.
  • Add the mozzarella and stir until smooth. Simmer for five more minutes then turn off the heat. serve as soon as possible.

Found this dreamy sounding recipe in a magazine and I had to add it to my repertoire of Italian dishes. I mean, FOUR cheeses! Recipe & photo: Food Network Magazine 08-09-14

1 lb tortellini
6 Tbsp butter
2 c heavy cream
1 pinch nutmeg
1/2 c grated mozzarella cheese
1/2 c grated parmesan cheese
1/2 c cubed taleggio cheese
1/4 c mascarpone cheese
6 c baby spinach
salt and pepper to taste

Steps:

  • 1. In a large pot of boiling salted water, add 1 pound tortellini pasta and cook as the label directs, stirring occasionally.
  • 2. Melt butter over medium heat; whisk in cream and nutmeg. Bring to a simmer. Add cooked, drained pasta and toss, adding up to 1/2 cup pasta water if needed.
  • 3. Stir in the four cheeses and add baby spinach. Stir until spinach is wilted. Season with salt and pepper to taste.
