Forevermama's Roasted Sugar Snap Peas With Thyme image

These sugar snap peas are one of our favorite side dishes. They go very well with different meats such as beef, poultry and even fish. They are also very delicious on their own, which I often eat for a light lunch. The best results are achieved when using fresh. I've used frozen and it is very good, but not to the same level as the fresh.

1 lb sugar snap pea, fresh
2 tablespoons extra virgin olive oil
1/3-1/2 cup finely diced onion (very finely diced)
2 teaspoons dried thyme
kosher salt
freshly grated black pepper
1/2 teaspoon sugar (optional)

Steps:

  • Preheat oven to 425 degrees F.
  • Remove and discard the stem end and the string from each pod. (If this is not removed, you will find yourself having to spit it out when chewing, so you want to make sure to remove it).
  • Rinse pods under cold running water. Pat dry.
  • Spread sugar snap peas in a single layer on a cookie sheet (that have ridges). Sprinkle with the olive oil, finely diced onion, and thyme.
  • Season with salt and black pepper. Sprinkle with sugar if necessary. (The sugar addition is only needed if the sugar snaps are not in season and lack natural sweetness. Adding the sugar is all a matter of taste).
  • Bake for approximately 10-12 minutes in the preheated oven, until tender crisp.

1 lb sugar snap pea (also called sugar peas, these peas are not shelled, as the entire pod is eaten)
1 tablespoon extra virgin olive oil
coarse salt
2 tablespoons chopped fresh chives

Steps:

  • Preheat broiler.
  • Line a large baking sheet with aluminum foil.
  • Toss peas with olive oil on prepared baking sheet.
  • Spread peas in a single layer.
  • Broil approximately 2 minutes, or just until crisp-tender and they are beginning to brown in spots, stirring once.
  • Remove from oven and transfer to a serving bowl.
  • Sprinkle with coarse salt and chives.

2 tablespoons peanut oil or 2 tablespoons canola oil
1/2 teaspoon whole cumin seed
1/2 teaspoon whole brown mustard seeds or 1/2 teaspoon yellow mustard seeds
3/4 lb fresh sugar snap pea, strings removed
3/4 teaspoon salt (or to taste)
2 teaspoons finely chopped fresh thyme or 1/2 teaspoon dried thyme
cayenne pepper (to taste)
fresh ground black pepper (to taste)
1 tablespoon fresh lemon juice

Steps:

  • Add the oil to a large skillet or wok and place over medium heat.
  • When the oil is hot, add in the cumin seeds and mustard seeds.
  • As soon as the mustard seeds begin to pop (should be a matter of seconds), turn off the heat.
  • When the oil is cooled to medium temperature, place the pan back on medium heat and add in the peas.
  • Stir-fry briskly for a few seconds.
  • Add in the salt, thyme, and 3 tablespoons of water.
  • Bring to a simmer; cover quickly and turn the heat down to low; cook for about 3 minutes or until the peas are almost done.
  • Uncover and add in the cayenne, black pepper, and lemon juice.
  • Turn the heat to high and quickly boil away all the liquid in the pan while stirring gently to mix the seasonings.
  • Serve right away.
