Steps:
- Preheat oven to 450.
- Unfold both pie crusts.
- Cut each crust in half.
- Place crust halves on ungreased cookie sheets.
- Prick several times with fork.
- Bake for 6 to 8 minutes or until light golden brown.
- Cool while preparing filling.
- In large microwave-safe bowl, combine apples sugar, flour, cinnamon, butter and vanilla Mix well.
- Cover and microwave on high for 3 minutes.
- Stir.
- Microwave an additional 3 to 6 minutes, or until apples are tender (stirring once halfway through cooking) Place 1/2 cup of frosting in a small microwave safe bowl; set aside.
- Add remaining frosting to apple mixture; stir until apples are coated.
- Place one crust half in center of ungreased cookie sheet.
- Spread with 1/3 of apple mixture (about 1 cup); sprinkle with 1/4 cup of pecans Top with second crust half, pressing lightly.
- Repeat layers ending with fourth crust half.
- Cover loosely with foil.
- Bake at 450 for 8 minutes.
- Remove foil and bake an additional 1 or 2 minutes or until golden brown.
- Microwave reserved frosting on high for 20 to 30 seconds, or until melted.
- Pour over top of torte and spread to edges.
- Sprinkle with remaining 1/4 cup pecans.
- Cool 15 minutes.
- To serve, cut into wedges.
- If desired, serve with ice cream or whipped topping.

FLOURLESS APPLE, ALMOND, AND GINGER CAKE
This gluten-free cake is quite large, always popular and well suited for dessert. It's also great for Passover-a bonus!

- Preheat the oven to 180°C (350°F/Gas 4). Grease and line a 26 cm (10 1/2 inch) springform cake tin.
- Peel and core the apples, then cut into wedges.
- Over medium heat, melt the butter in a frying pan large enough to fit the apples in one layer. Add the apple wedges, caster sugar and cloves and toss to combine. Cook, stirring occasionally, until the apples are well coated, soft and starting to colour, about 5-10 minutes. There should be no liquid left in the pan. Remove the cloves, add the raisins and cook for another minute or so to soften. Remove from the heat and cool.
- Process the ground almonds, whole almonds, ginger and baking powder in a food processor until coarsely chopped. Set aside.
- In an electric mixer, whisk the eggs, raw sugar and maple or golden syrup until light and fluffy. Fold in the nut mixture and cooked apples. Pour into the prepared tin.
- To make the topping, core and thinly slice the apples and arrange over the cake batter, overlapping slightly. Scatter the almonds on top, pour the melted butter over and then sprinkle on the sugar.
- Bake the cake for about 1-1 1/4 hours until golden and cooked through and a skewer inserted in the middle comes out clean. If the cake is browning too quickly, cover with some foil.
- Cool completely in the tin and serve at room temperature with plain yoghurt or vanilla ice cream.
SIMPLE FLOURLESS APPLE CRISP
I made this quick and easy, flourless apple crisp to cut out some carbs. I've found that 2 Macintosh and 2 Granny Smith apples work best.

- Preheat oven to 350 degrees F (175 degrees C).
- Arrange apple slices in 9-inch circular glass pie plate.
- Stir oats, brown sugar, and ground cinnamon together in a bowl.
- Microwave butter in short 5-second increments until melted, about 20 seconds. Stir honey, melted butter, and oil into oat mixture; crumble over apples.
- Bake in preheated oven until golden brown, about 35 minutes. Cool on a wire cooling rack, about 45 minutes.

- Place egg whites in a large bowl; let stand at room temperature 30 minutes. Preheat oven to 350°. In top of a double boiler or a metal bowl over barely simmering water, melt chocolate and butter; stir until smooth. Remove from heat; cool slightly., In another large bowl, beat egg yolks until thick and lemon-colored. Beat in chocolate mixture. With clean beaters, beat egg whites and cream of tartar on medium speed until foamy., Gradually add sugar, 1 tablespoon at a time, beating on high after each addition until sugar is dissolved. Continue beating until stiff glossy peaks form. Fold a fourth of the egg whites into chocolate mixture, then fold in remaining whites., Transfer to a greased 9-in. springform pan. Bake until a toothpick inserted in center comes out with moist crumbs, 40-45 minutes (do not overbake). Cool completely on a wire rack., Loosen sides from pan with a knife. Remove rim from pan. If desired, dust with confectioners' sugar.
