SPINACH AND CHEESE FLATBREAD

2 teaspoons sugar
1 1/4-ounce packet active dry yeast
1 1/2 tablespoons extra-virgin olive oil, plus more for brushing
2 1/4 cups all-purpose flour, plus more for dusting
3/4 teaspoon fine salt
2 cups grated gouda or fontina cheese (about 6 ounces)
1 green bell pepper, thinly sliced
4 scallions, thinly sliced, white and green parts separated
1 1/2 cups loosely packed baby spinach
Pinch of sea salt or kosher salt

Steps:

  • Combine 1 cup warm water (110 degrees F), the sugar and yeast in a large bowl. Let stand until foamy, about 5 minutes. Add 1 tablespoon olive oil, the flour and fine salt; stir to form a sticky dough. Turn out onto a floured surface and knead until smooth, about 10 minutes, dusting with flour.
  • Brush a large bowl with olive oil; add the dough, loosely cover with plastic wrap and set aside until doubled in size, about 1 hour, 30 minutes.
  • Brush a rimmed baking sheet with olive oil. Stretch the dough on the baking sheet. Cover with a towel; set aside until doubled, 30 minutes.
  • Preheat the oven to 475 degrees F. Scatter the cheese, bell pepper and scallion whites over the dough. Bake until the crust is golden, 15 to 18 minutes. Toss the spinach and scallion greens with the remaining 1/2 tablespoon olive oil and the sea salt. Sprinkle over the flatbread; bake 2 more minutes.

100 g feta, thinly sliced
handful Baby Spinach
50 g mozzarella cheese
1 garlic clove, minced
2 tablespoons olive oil

Steps:

  • 1. Combine olive oil and garlic and set aside.
  • 2. Spread one half of pita bread with feta, top with spinach and mozzarella for each.
  • 3. Fold over and place on hot sandwich press, brush top with garlic oil.
  • 4. Press until golden.

1 naan bread, large piece
¼ cup pine nuts
1 clove garlic
2 cups fresh basil leaves, plus more for garnish
½ cup extra virgin olive oil
kosher salt, to taste
½ cup grated parmesan cheese
6 sundried tomatoes, halved
4 oz burrata, torn
freshly ground black pepper, to taste

Steps:

  • Preheat the oven to 425°F (220°C).
  • Place the naan in the oven directly on the rack and warm for 5-7 minutes, until golden brown and crispy..
  • Make the pesto: Add the pine nuts, garlic, and basil to a mini or regular food processor or blender and pulse to coarsely chop. Scrape down the sides of the bowl, then add the olive oil, a pinch of salt, and the Parmesan and process until well combined.
  • Remove the naan from the oven and spread with about ¼ cup of the pesto. Top with the sun-dried tomatoes and burrata.

1 lb. pizza dough
2 T olive oil
1 T butter
1 1/2 c. thinly sliced Leeks (rinsed well, but does not have to be fully dried)
3 c. spinach, well packed
Kosher salt
Pepper
3/4 c. fresh corn kernels
fresh lemon juice
Burrata
Sea salt

Steps:

  • -Preheat oven to 475 degrees -Spread semolina or flour on a baking sheet or pizza stone -Place pizza dough on a floured surface, and either roll or stretch until you have a thin crust (no thicker than 1/2 inch) -Brush with olive oil and sprinkle with salt. Bake for 10-12 min, until golden brown. -While crust bakes, warm 2 T. olive oil and 1 T. butter in a large sauce pan. When hot, add leeks. Season with kosher salt and ground pepper to taste. -When mostly softened (about 6-8 min), add baby spinach and corn kernels. Cook, stirring, until the spinach is wilted, another 2 min. Season again with salt and pepper and a squeeze of fresh lemon, to taste. -Remove baked flatbread from oven, and spread the corn mixture evenly on the top, leaving about 1 inch around the edges. -Dollop the burrata cheese over the top, drizzle with more olive oil and sprinkle with sea salt. Serve hot or warm
