These crackers are very rich, yet still quite light and crispy. They pair well with soup.

Number Of Ingredients 8

1 cup toasted walnuts (3 1/4 ounces)
3/4 cup all-purpose flour, plus more for dusting
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
1/4 teaspoon baking soda
2 tablespoons cold unsalted butter, cut in pieces
1/4 pound blue cheese, crumbled
Coarse salt for sprinkling

Steps:

  • In the bowl of a food processor, finely grind 1/2 cup walnuts. Add flour, salt, pepper, and baking soda; pulse to combine. Add butter; pulse until mixture resembles coarse meal. Add cheese; pulse until dough comes together, about 15 seconds.
  • Preheat oven to 350 degrees. Transfer dough to lightly floured surface; divide into two equal parts. Using your hands, roll dough into two 1 1/2-inch-diameter logs. Coarsely chop remaining 1/2 cup walnuts; sprinkle over a clean work surface. Roll logs in walnuts. Wrap each log in plastic wrap, and chill until firm, at least 3 hours.
  • Slice logs into 1/4-inch-thick coins. Transfer to ungreased baking sheet; sprinkle lightly with coarse salt. Bake until centers are firm to the touch, about 15 minutes. Transfer to a wire rack to cool. Store in an airtight container, at room temperature, 3 to 4 days.

2/3 cup finely chopped walnuts
1/3 cup crumbled blue cheese
1 tablespoon finely snipped parsley
1/4 teaspoon pepper
1 refrigerated pie crust, sheet
1 tablespoon milk
2 teaspoons grated or ground parmesan cheese
finely snipped parsley (to garnish)

Steps:

  • For filling, in medium bowl mix together walnuts, blue cheese, snipped parsley and pepper.
  • Unroll pie crust sheet and spread filling evenly over the crust.
  • Cut pastry circle into 12 wedges.
  • Starting at wide ends, loosely roll up wedges.
  • Place rolls, tip side down, on a greased baking sheet.
  • Can cover and chill for up to 24 hours if desired.
  • Before baking, brush rolls lightly with milk.
  • Sprinkle with parmesan cheese and additional parsley.(I prefer the ground parmesan for this.).
  • Bake at 425º for about 15 minutes or til golden.
  • Cool on wire rack.
  • Serve warm.

1/4 pound (1 stick) unsalted butter at room temperature
8 ounces Stilton cheese, crumbled (about 12 ounces with rind), at room temperature
1 1/2 cups all-purpose flour
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 extra-large egg beaten with 1 tablespoon water for egg wash
1/2 cup roughly chopped walnuts

Steps:

  • In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and Stilton together for 1 minute, or until smooth. With the mixer on low speed, add the flour, salt and pepper and mix until it's in large crumbles, about 1 minute. Add 1 tablespoon of water and mix until combined.
  • Dump the dough onto a floured board, press it into a ball, and roll into a 12-inch long log. Brush the log completely with the egg wash. Spread the walnuts in a square on a cutting board and roll the log back and forth in the walnuts, pressing lightly, and distributing them evenly on the outside of the log. Wrap in plastic and refrigerate for at least 30 minutes or for up to 4 days.
  • Meanwhile, preheat the oven to 350 degrees F.
  • Cut the log 3/8ths-inch thick with a small, sharp knife and place the crackers on a sheet pan lined with parchment paper. Bake for 22 minutes until very lightly browned. Rotate the pan once during baking. Cool and serve at room temperature.

If serving this dip to friends, surround it with large pieces of cabbage, sliced celery sticks and a sleeve of saltine crackers - and make extra, because it can disappear quickly. But it's built for more than entertaining guests: Slather it on a potato bun in a chicken cutlet sandwich, or use it to dress up a BLT.

8 ounces blue cheese, crumbled
1/2 cup buttermilk
1/4 cup mayonnaise
1/4 cup thinly sliced chives, plus more for garnish
1 small shallot, finely chopped
2 tablespoons lemon juice
1 teaspoon sweet paprika
Kosher salt and black pepper
Celery sticks, for serving
Red cabbage, cut into wedges, for serving
Saltine crackers, for serving

Steps:

  • Heat oven to 350 degrees. Spread walnuts on a baking sheet and toast in oven until golden brown, about 10 minutes. Let cool, then coarsely chop.

4-ounce bar of cream cheese, room temperature
1/2 cup walnuts, chopped
Coarse salt and ground pepper
4 ounces (1 cup) cold crumbled blue cheese, such as Stilton
Crackers or crostini, for serving

Steps:

  • In a medium bowl, stir cream cheese with a wooden spoon until softened. Mix in walnuts; season with salt and pepper. Gently fold in blue cheese, breaking up as little as possible. Transfermixture to a small bowl; smooth top. Serve with crackers or crostini. To store: Cover with plastic wrapand refrigerate, up to 1 week.
