This cocktail recipe is halfway between a French 75 cocktail and a Negroni, made with gin, Campari, lemon juice, and Champagne.

Number Of Ingredients 6

1 ounce Plymouth gin
1⁄4 ounce Campari
1⁄2 ounce fresh lemon juice
1⁄2 ounce simple syrup (1:1 sugar:water)
Champagne
Garnish: 1 grapefruit twist

Steps:

  • Shake the gin, Campari, lemon juice, and simple syrup with ice, then strain into a chilled champagne flute. Top with champagne. Squeeze the grapefruit twist over the drink, then discard.

Yield Makes about 12 servings in a 2 1/2-or 3-quart pitcher

1 1/2 cups chilled fino or manzanilla sherry
1 1/2 cups Campari
To serve:
1 (750 ml) bottle chilled dry sparkling wine
18 orange wheels

Steps:

  • Up to 24 hours before serving, make the batch. Pour sherry and Campari into a 2 1/2- or 3-quart pitcher and stir to mix. Seal well, covering with plastic wrap if needed, and refrigerate if not serving immediately.
  • To serve, stir 1 cup ice and 6 orange wheels into pitcher mix, then carefully add chilled sparkling wine and stir again gently to mix. Pour into ice-filled wine glasses or rocks glasses and garnish each glass with an orange wheel.

Fizzy Campari and Gin image

Number Of Ingredients 4

2 ounces Campari
2 1/2 ounces gin
Pinch salt
Lime wedges or lemon twists, for serving

Steps:

  • Mix ingredients, plus 5 1/2 ounces very cold water, in a measuring cup with a pouring spout.
  • Working in small batches, pour cold mixture into the bottle of a carbonator, filling it not more than 1/3 full (this will give the mixture room to foam). Charge with CO2 until very fizzy, waiting between charges for foam to subside completely. (This can take up to 2 minutes, so be patient.)
  • Very slowly, as if opening a bottle of soda, release the bottle from the carbonator. Serve immediately, or cover tightly and chill. To serve, pour into small glasses and serve straight up, with a squeeze of lime or twist of lemon.
