1 envelope pesto sauce mix
1 tablespoon lemon juice
6 halibut fillets (4 ounces each)

Steps:

  • Preheat oven to 450°. In a small bowl, combine oil, sauce mix and lemon juice; brush over both sides of fillets. Place in a greased 13x9-in. baking dish. , Bake, uncovered, until fish just begins to flake easily with a fork, 12-15 minutes.

This 3-ingredient dish is mild enough for the kids. The white fish with the contrast of the green pesto sauce provides a touch of style, and as Scramble recipe tester Alice Clark said, this is "restaurant quality fabulous."

1 Tbsp butter
1 1/2 - 2 lbs. halibut fillets (with or without skin) or other thick white fish fillets
1/4 cup pesto sauce (store-bought or homemade) (See below for homemade directions)

Steps:

  • Preheat the oven to 400 degrees. Put the butter in a casserole dish large enough to hold the fish in one layer, and place the dish in the oven to melt the butter. Remove the dish from the oven and coat both sides of the fish with butter by flipping it once in the dish. (If the fillet has skin, the skin side should be down after you flip the fish.)
  • Brush the pesto on top of the halibut flesh. (At this point, the fish can be covered and refrigerated for up to 12 hours.) Bake it for 15 - 20 minutes, depending on the thickness of the fish, until it is just cooked through and flakes easily. Serve it immediately.

HALIBUT WITH LEMON-BUTTER AND CRISPY SHALLOTS



Halibut with Lemon-Butter and Crispy Shallots image

1 tablespoon fresh lemon juice
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
Zest of 1 large lemon
1/2 stick unsalted butter, at room temperature
1/4 cup extra-virgin olive oil
2 tablespoons fresh lemon juice
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 large cloves garlic, smashed
4 halibut fillets (each 4 to 5 ounces)
1/2 cup grapeseed oil
2 large shallots, cut into rounds, separated into rings
Lemon wedges, for garnish

Steps:

  • For the lemon butter: Whisk together the lemon juice, salt, pepper, lemon zest and butter in a deep medium bowl until well blended (mixture will be like a thick sauce). Set aside until ready to use.
  • For the halibut and crispy shallots: Combine the olive oil, lemon juice, garlic, salt, pepper and garlic in an 8-by-8-by-2-inch glass dish. Whisk the marinade to blend. Add the halibut and turn several times to coat evenly. Let stand 15 to 20 minutes.
  • Combine the grapeseed oil and shallots in a medium heavy saucepan over medium-high heat. Cook, stirring often, until the oil heats up and the shallots turn golden brown, 5 to 7 minutes. Transfer the shallots with a slotted spoon to several layers of paper towels to drain and crisp. Sprinkle with salt and pepper just before using.
  • Heat a large dry nonstick skillet over medium-high heat. Lift the halibut from the marinade, letting the excess drain off. Add the halibut to the hot skillet and sear 3 minutes. Turn the fish over using a flexible metal spatula. Sear until still slightly pink in the center, about 3 minutes longer, depending on thickness. Transfer the halibut to plates. Top with a generous dollop of lemon-butter and pile the shallots alongside or scatter around the fish. Garnish with the lemon wedges and serve.

4 sheets phyllo dough
2 (5 ounce) halibut fillets
salt and pepper to taste
2 teaspoons chopped fresh dill
3 tablespoons lemon juice
½ cup whipping cream
2 green onions, finely chopped

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Lightly butter 1 sheet of phyllo dough. Lay another sheet directly on top of the first sheet, and lightly butter it. Repeat with remaining 2 sheets of phyllo. Cut sheets in half.
  • Season halibut fillets with salt and pepper. Place a fillet near the bottom edge of one of the halved sheets of phyllo. Sprinkle with dill. Fold in the sides of the phyllo, then roll the fillet. Place on a baking sheet, and lightly brush with butter. Repeat with remaining fillet.
  • Bake in a preheated oven until pastry is puffed and golden brown, about 12 to 15 minutes.
  • Meanwhile, bring lemon juice to a boil in a small saucepan over high heat. Boil until almost evaporated. Reduce heat to medium, and stir in cream. Simmer until the cream thickens somewhat. Stir in green onions, and season with salt and pepper. Serve halibut on a pool of sauce.

1 large lemon, quartered
olive oil for brushing

Pan Seared Halibut with Lemon Dill Sauce image

16 ounces halibut fillets, two 8-oz pieces, about 2-inch thick
? kosher salt
? black pepper
? grapeseed oil
1 cup dry white wine, chardonnay recommended
1/3 cup shallots, minced
3 tablespoons dill, chopped fresh
2 teaspoons lemon zest
3 teaspoons lemon juice
? kosher salt, to taste

Steps:

  • Lemon Dill Sauce In a small saucepan, heat wine and shallots over medium-high heat until reduced to 2 tablespoons, about 12-15 minutes. Turn off the heat. Gradually add each cube of butter into the reduction, whisking each piece to create a thicker emulsified sauce. Add the chopped dill, lemon zest, and lemon juice into the sauce, whisking to combine. Taste and season with salt as needed. Set aside.
  • Pan-Seared Halibut Remove the fish from the refrigerator and let stand for 15 minutes. Dry the surface very well in between two paper towels. Right before cooking, season each side of the halibut fillets generously with salt and pepper. Preheat a large stainless steel pan over high heat. Add enough grapeseed oil until it reaches about ⅛-inch of the side of the pan. Heat until oil starts to shimmer. Carefully add each halibut fillet to the pan presentation-side down, press the flesh with a spatula to create direct contact with the oil to create a golden crust. Reduce heat to medium-high and cook for 4-5 minutes. When the bottom of the fish is golden brown, carefully flip to the other side. Reduce heat to medium-low and heat until cooked through, making sure not to overcook the fillets, about 2-4 minutes. Transfer to plate with a paper towel to remove any excess cooking oil. Gently reheat the lemon dill sauce, whisking to combine making sure not to overheat as this will cause the sauce to separate. Serve each fillet with a ¼ cup of sauce.

2 (6 oz) halibut fillets
Olive oil
Salt and pepper
Lemon-Dill Pesto
1 cup fresh Italian parsley
1/3 cup fresh dill
1/3 cup slivered almonds, toasted
1/4 tsp salt
1/4 tsp pepper
3 Tbsp olive oil
Zest from 1 lemon
1 Tbsp lemon juice

Steps:

  • Brush halibut with a bit of olive oil, and sprinkle with salt and pepper. Grill or bake halibut at 450°F for about 20 minutes, or until flakes with a fork. Place pesto ingredients together in a mini food processor and puree until smooth. To serve, place a dollop of pesto on top of each piece of cooked halibut.
