1 lb fillets of sole or 1 lb flounder
1/2 cup flour
1/2 teaspoon salt
1/2 teaspoon pepper
2/3 tablespoon unsalted butter (DIVIDED)
2 tablespoons finely chopped onions (DIVIDED)
3 tablespoons frozen orange juice concentrate
1/2 cup dry white wine

Steps:

  • Dry fish on paper towels.
  • mix flour, salt and pepper together.
  • dip fish slices in seasoned flour to coat lightly.
  • melt 2 tblsp butter in large skilet.
  • Add onion and saute over medium heat until they are soft but not browned.
  • Leave onion in pan.
  • Add fish filets and cook until lightly browned, turning once, 2 to 3 minutes on each side.
  • Do not crowd fish in pan.
  • Repeat steps 2 and 3 for larger portions of fish.
  • Remove fish to a micro safe dish.
  • Lower heat and melt 2 tablespoons butter, add orange juice concentrate and wine.
  • Stir to combine and heat through.
  • Pour sauce over fish.
  • Microwave few minutes to reheat.

2 tablespoons butter
1/2 cup chopped onion
1 garlic clove, minced
1 teaspoon grated orange zest

1 ½ cups orange juice
6 tablespoons butter, softened
¾ cup panko bread crumbs
3 tablespoons orange juice
2 cloves garlic, minced
1 tablespoon minced fresh basil
½ cup orange juice

Steps:

  • Pour 1 1/2 cups orange juice into a resealable plastic bag. Add tilapia fillets, coat with the juice, squeeze bag to remove excess air, and seal the bag. Marinate in the refrigerator 3 hours to overnight.

  • Whisk butter, panko bread crumbs, 3 tablespoons orange juice, garlic, and basil together in a bowl.

A blast of heat in a cast-iron pan and a basting of golden butter does wonders for plain fish fillets. This life-changing method is adopted from a former chef and current fishmonger, Mark Usewicz of Mermaid's Garden in Brooklyn, who also teaches cooking classes in topics like "How to Cook Fish in a New York City Apartment." The cooking time is so short that the smell - which, if your fish is fresh and not funky, should not be overpowering - will dissipate quickly. And in the meantime, you have an easy dinner of tender fish with a toothsome crust, anointed with nutty, lemony brown butter and perfumed with herbs. You can use virtually any fish fillet, skin on or off, as long as it is not too thick. If the butter is browning too fast, reduce the heat and add a nut of cold butter to prevent scorching, or squeeze in the juice of half a lemon.

1 tablespoon freshly squeezed lemon juice

2 Cerignola or other large green olives with pits

Steps:

  • Preheat the oven to 400 degrees.
  • Place the fish fillet on a piece of parchment paper and sprinkle it with the salt and pepper. Drizzle the lemon juice and olive oil over the top of the fillet. Lay the thyme on top and place the olives next to the fillet.
