- Preheat oven to at 350°. Tie legs of each hen together; turn wing tips under backs. Place on a greased rack in a roasting pan. Brush with butter; sprinkle with salt and pepper. Bake, uncovered, for 1 hour., Meanwhile, in a saucepan, combine the remaining ingredients; bring to a boil. Reduce heat; simmer, uncovered, until thickened, 15 minutes. Spoon over hens. Bake until a thermometer reads 170°, about 15 minutes longer.

- Preheat oven to 425 degrees F.
- Line 2 baking pans with foil for easier cleaning. Set a baking rack in each pan. Split hens and butterfly open and place 3 hens in each baking pan. Season the hens with salt and pepper liberally. Mix the orange concentrate, balsamic vinegar and olive oil and pour evenly over the hens. Sprinkle with rosemary and roast 15 minutes at 425 degrees F and 30 minutes at 375 degrees F.

- Preheat oven to 350 degrees.
- Remove giblets from defrosted birds and discard.
- Melt butter in a heavy skillet with heat-proof handle.
- Season hens with salt and pepper.
- Brown hens lightly all over in the butter, turning frequently, about 20 minutes.
- When hens are browned, add sherry to the pan and transfer it to the oven.

- Preheat oven to 375 degrees F.
- Mix together salt, basil and allspice.
- Sprinkle mixture inside and outside of Cornish hens.
- Place 1/4 orange in each hen and place them in a roasting pan.
- Add water to pan.
- Over low heat, simmer together honey, butter and orange juice concentrate until thickened.
- Drizzle about half the mixture over Cornish hens and roast uncovered for about 25 minutes.
- Roast for another 25 minutes or until juices run clear and hens are not pink inside, basting with the rest of the honey-orange sauce after 10 minutes.

- Preheat oven to 500°F.
- Prepare hens by rubbing mixture of salt and pepper into skin liberally.
- Place on cookie sheet, breast side up.
- Roast for 15 minutes at 500°F.
- Remove from oven and turn breast down; pour 1 1/2 cups water over hens.
- Turn oven down to 425°F and continue to cook for 1/2 hour.
- Meanwhile, use a zester to obtain orange peel without cutting into pith of fruit.
- Slice oranges in half and squeeze juice.
- Place juice in saucepan with zest and heat thoroughly (do not boil).
- Remove hens from oven and turn breast-side up and continue cooking for additional 1/2 hour (total cooking time is 1 hour 15 minutes).
- Blend cornstarch with orange juice/zest mixture and heat to thicken, stirring constantly.
- To serve: Place hen on plate and pour sauce over. Sprinkle with additional orange zest and parsley.

- Preheat oven to 425°.
- Line 2 rimmed baking sheets with foil; set a baking rack in each pan.
- Using poultry shears or a sharp chef's knife, cut along both sides of each hen's backbone and discard.
- Open the birds up and turn skin side up, pressing lightly on the breastbones to flatten them a bit.
- Arrange 3 hens on each baking rack, skin side up, and season liberally with salt and pepper.

- Preheat the oven to 375°F Heat the olive oil in a large flame-proof casserole and add the onion, garlic and bacon; sauté 5 to 6 minutes, until the onion has softened.
- Brush the hens with a little melted butter and season well.
- Lay the hens on top of the onion mixture and place the other vegetables around hens. Add the chicken stock, wine and herbs.
- Cover and bake for 20 minutes, then remove the lid and brush with the remaining melted butter; bake for another 25 to 30 minutes, until golden.
- Transfer the hens to a warmed serving platter and cut each in half with poultry shears.
- Remove the vegetables with a slotted spoon and arrange them around the hens. Cover with foil and keep warm.
- Discard the herbs from the pan juices. In a small bowl mix the butter and flour to form a paste. Bring the liquid in the pan to a boil and then whisk in teaspoonfuls of the paste until thickened.
- Season the sauce and serve with the Rock Cornish hens and vegetables, garnished with fresh herbs.

- Place full thawed game hens in a shallow baking dish.
- Sprinkle liberally with poultry seasoning, then rub the seasoning onto the skin.
- Scatter onion rings and minced garlic over the birds.
- In a small saucepan, melt the apple jelly. Gently ladle the melted jelly over each hen.
- Place in the middle rack of the oven. Periodically, baste the birds with the pan juices.
- Roast 1 hour 15 minutes or until done. Let rest 5 minutes or so. Spit hens in half and arrange on platter or plates. Ladle some of the pan juices on the birds.

- 1. In a bowl, mix all ingredients and blend Place Hens in a 9 by 13 dish Pour mixture over Hens and cook covered
- 2. Orange Sauce 2 cups liquids drippings from pan if not 2 cups add enough orange juice to make the 2 cups 2 tablespoons flour 2 tablespoons butter
- 3. Make a rue and then add the 2 cups drippings Bring to a boil then simmer for 10 minutes Sauce should be placed on the table so all can take what they want.
