6 tablespoons butter, divided
3 large onions, halved and thinly sliced
1 tablespoon sugar
1/4 teaspoon salt
12 dried figs, sliced
1 cup water
3 tablespoons honey
12 slices slices Italian bread (1/2 inch thick)
8 ounces Asiago cheese, sliced
12 thin slices prosciutto
3/4 cup crumbled goat cheese
Balsamic glaze, optional

Steps:

  • In a large skillet, heat 2 tablespoons butter over medium heat. Add onions, sugar and salt; cook and stir until softened, about 15 minutes. Reduce heat to medium-low; cook until deep golden brown, 30-40 minutes, stirring occasionally., Meanwhile, place figs, water and honey in a small saucepan. Bring to a boil; reduce heat. Simmer, uncovered, until liquid is almost evaporated, about 20 minutes., Preheat panini maker or indoor electric grill. Layer 6 slices of bread with Asiago cheese, prosciutto, goat cheese, caramelized onions and figs; top with remaining bread. Spread outsides of sandwiches with remaining butter., Cook sandwiches, covered, until bread is browned and cheese is melted, 4-5 minutes. If desired, drizzle with balsamic glaze.

2 tablespoons butter
2 large onions, finely sliced
1 tablespoon white sugar
1 (17.5 ounce) package frozen puff pastry, thawed
14 ounces creamy goat cheese
1 orange, zested
1 pinch salt
7 fresh figs, thinly sliced
2 sprigs fresh thyme, leaves removed

Steps:

  • Melt butter in a skillet over medium-low heat and cook onions, stirring frequently, until browned, about 25 minutes. Sprinkle with sugar, mix well, and cook an additional 1 to 2 minutes. Remove from heat and set aside to cool slightly.
  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper. Roll out puff pastry dough and place on the prepared baking sheet.
  • Stir goat cheese and orange zest together in a bowl until smooth. Season with salt and spread onto puff pastry. Top with figs and caramelized onions. Sprinkle with thyme leaves.

¼ cup canola oil
1 large yellow onion, cut into thin slices
¼ cup small dried Mission figs
6 ounces goat cheese, softened
40 crackers

Steps:

  • Heat a skillet over medium heat; add oil. Add onion; cook and stir until onion has softened and turned translucent, about 5 minutes. Reduce heat to low and continue cooking and stirring until onion is very tender and dark brown, about 40 minutes more. Remove from heat and cool.
  • While the onion is cooling, cut the figs lengthwise into 1/4-inch rounds.
  • Layer 1/4 teaspoon goat cheese, 1/4 teaspoon caramelized onions, and 1 or 2 fig slices on each cracker.

1 lb prepared pizza dough, room temperature (I used Pizza Dough Bread Machine for one pie)
1 tablespoon olive oil
1 small sweet onion, sliced
4 -6 fresh figs, cut in half
5 ounces goat cheese (if you can get goat cheese with cranberries it fabulous)
1 teaspoon chopped fresh rosemary
1/2 cup mozzarella cheese, shredded
olive oil
cornmeal

Steps:

  • In a pan saute onions in oil till a caramel color, set aside to cool completely.
  • Preheat oven to 450 degrees.
  • Roll out dough on a floured surface to 1 inch thick. You can make it round or square all a matter of taste.
  • Place on a pan that is dusted with corn meal.
  • Spread a thin coat of olive oil on dough.
  • Arrange goat cheese, figs cut side up, cooled onions around on crust.
  • Top with mozzarella cheese and sprinkle with rosemary.
  • Place in oven and bake for 15-20 minutes.
  • ALTERNATE method:.
  • If grilling preheat grill to medium high.
  • Oil one side and place on a clean oiled grill and grill for 4-5 minutes.
  • Flip and then lightly spread olive oil on dough.
  • Arrange goat cheese, figs cut side up, cooled onions around on crust.
  • Top with mozzarella cheese and sprinkle with rosemary.
  • Cook a couple more minutes.

2 pounds goat cheese
14 dried Mission figs (1 cup), sliced
1/4 cup dry sherry
1/4 cup olive oil
2 large Spanish onions, thinly sliced
10 garlic cloves, crushed
3 rosemary sprigs
2 teaspoons salt
Freshly ground black pepper
2 sliced baguettes, for dipping

Steps:

  • Preheat the oven to 350 degrees F.
  • Crumble the goat cheese into an oven safe dish and set aside.
  • In a sauce pot combine the figs and sherry with enough water to barely cover the figs. Place the sauce pot over high heat and bring up to a bubble, cover and remove from the heat and let the figs plump while the onions are cooking.
  • Pour the olive oil into a large skillet and place over medium heat. Add the onions, garlic, rosemary, salt and pepper and cook, stirring often, for about 10 minutes, or until lightly browned. Using a slotted spoon remove the plumped figs from the sauce pot, leaving behind any of the pluming liquid. Add the figs to the cooked onions, stir to combine and then spoon over the goat cheese. Place the dish into the top half of the oven for 20 minutes, until the edges begin to bubble.
  • Remove and serve immediately with sliced baguettes.

1/2 cup fresh goat cheese (3 1/2 ounces), room temperature
8 thick slices country bread
1/2 pound ripe fresh figs (about 8), stemmed and thinly sliced

Steps:

  • In a large skillet, heat oil over medium. Add onions, and season with salt and pepper. Cover, and cook, stirring occasionally, until onions have softened, 8 to 10 minutes. Uncover; cook until onions are golden brown, 10 to 12 minutes more (if skillet begins to darken, add cup water).
  • Dividing evenly, spread cheese on 4 bread slices. Top with onions and figs; sandwich with remaining bread.
