FRESH FIG, CARAMELIZED ONION AND GOAT CHEESE GOURMET PIZZA
This is really really good! For Goat cheese lovers do try to purchase the goat cheese that is rolled in plump dried cranberries. Do try ir on the grill!

Steps:
- In a pan saute onions in oil till a caramel color, set aside to cool completely.
- Preheat oven to 450 degrees.
- Roll out dough on a floured surface to 1 inch thick. You can make it round or square all a matter of taste.
- Place on a pan that is dusted with corn meal.
- Spread a thin coat of olive oil on dough.
- Arrange goat cheese, figs cut side up, cooled onions around on crust.
- Top with mozzarella cheese and sprinkle with rosemary.
- Place in oven and bake for 15-20 minutes.
- ALTERNATE method:.
- If grilling preheat grill to medium high.
- Oil one side and place on a clean oiled grill and grill for 4-5 minutes.
- Flip and then lightly spread olive oil on dough.
- Arrange goat cheese, figs cut side up, cooled onions around on crust.
- Top with mozzarella cheese and sprinkle with rosemary.
- Cook a couple more minutes.
FIG AND GOAT CHEESE PIZZA
This can be used as a main dish or an appetizer. It contains dried figs, caramelized onions and tangy goat cheese on a homemade crust.

Steps:
- Pour the water into a large bowl, and sprinkle yeast over the top. Let stand for a few minutes to dissolve. Mix in the oil, salt, and flour to make a dough. When the dough is too stiff to stir, turn out onto a floured surface, and knead for about 5 minutes. Place into an oiled bowl, and cover with a clean towel. Set aside to rise for about 45 minutes.
- Place the figs into a small bowl, and pour boiling water over them. Let stand for about 10 minutes, then drain and chop. Set aside.
- Meanwhile, heat 1 tablespoon of oil in a skillet over medium heat. Add the onions; cook and stir until they are wilted and soft. Reduce heat to low, and season with salt. Continue to cook and stir until the onions are a dark brown, 5 to 10 minutes. Stir in the thyme, fennel seed and figs, and remove from the heat.
- Preheat the oven to 450 degrees F (220 degrees C). Punch down the pizza dough, and stretch into a circle about 1/4 inch thick. Place on a lightly greased pizza pan or baking sheet. Brush the surface lightly with remaining olive oil. Spread the onion and fig mixture over the crust. It will be sparse, but there is plenty of flavor. Dot with pieces of goat cheese.
- Bake for 15 to 18 minutes in the preheated oven, or until the crust has turned golden brown at the edges.

- Add port to a small pot, and simmer over medium heat for approximately 30 minutes, or until it reduces to a couple of tablespoons and takes on the consistency of maple syrup. Reserve.
- Lightly sprinkle work surface with corn meal. Place dough directly in the middle of the work surface. Roll dough out gently 1/4-inch thick, into either a 12-inch rectangle or circle. Brush both sides with oil and set aside until ready to grill.
- If you are grilling on a charcoal grill, set coals on one side of the grill.
- Place dough directly on the cooking grate over medium heat for 1 to 3 minutes, until the crust is well marked and browned. Flip dough and spread with orange marmalade on cooked side of pizza crust. Arrange fig slices in on top. Sprinkle cheese evenly over the top. Move to indirect heat (for charcoal: the side of charcoal grill that has no coals. For gas: turn off burner directly under pizza). Cover grill and cook for 5 to 10 minutes, or until bottom is well browned, and cheese is fully melted.
- Remove from grill. Slice, drizzle with port reduction, and serve immediately.
SKILLET TORTILLA PIZZA WITH FIG BUTTER, GOAT CHEESE, AND ARUGULA

- Heat a small amount of olive oil in a nonstick or cast iron skillet set over medium high heat. Spread 1/4c of the fig butter on the top side of a tortilla and then place a layer of apple slices over top. Season the top with salt and pepper and place the tortilla in the hot skillet. Spread 1/3c of the crumbled goat cheese over the top leaving a 1in margin around the edges of the circle. Cook for 2 to 3 min or until the cheese is partially melted; adjust the heat if necessary to crisp and brown the bottom of the tortilla without burning. Use a large spatual to carefully transfer it to a cutting board. Top with 1/2c of baby arugula and season with salt and pepper. Cut into wedges and serve.
FIG AND GOAT CHEESE PIZZA

- Heat 1 tsp of oil in a sauté pan over medium heat, add onions, salt, pepper, and sugar and cook, stir to combine. Cook onions slowly for about an hour stirring every 10 minutes or so, after initial 10 minutes reduce heat to medium-low. Once onions have reduced to about a third and are a nice caramel color, set aside. Preheat pizza stone in oven at 450 degrees. Stretch pizza dough and prepare pizza on a well floured (or cornmeal) surface. Spread 1 tbsp of olive oil on crust, cover with a thin layer of mozzarella cheese, crumble goat cheese over pizza, top with onions, and sliced figs-cut side up. Bake 15 minutes until crust is golden brown. Top with fresh rosemary right out of the oven.
