½ cup water
½ cup Canola oil
6 tablespoons crushed or diced canned tomatoes (drained)
6 tablespoons El Pato Tomato Sauce, Mexican Hot Style (Yellow can (not green))
¼ cup red wine vinegar
3 tablespoons sugar
1½ teaspoons Worcestershire sauce
1 teaspoon lemon juice
1 teaspoon salt
1 teaspoon garlic powder
½ teaspoon hot pepper sauce (I use Chalula)
¼ teaspoon xanthan gum (optional)
1 ounce Romano cheese (fresh, finely grated)
¾ - 1 teaspoon freshly ground black pepper

Steps:

  • Put everything in a blender jar except the Romano cheese and black pepper, and blend until smooth and creamy.
  • Add the cheese and pepper and pulse to break up the cheese a bit more.You want the pepper and cheese to be a little grainy to give the dressing some texture.

½ cup plain yogurt
¼ cup light sour cream
2 tablespoons ketchup
2 tablespoons minced onion
1 tablespoon lime juice
1 tablespoon finely chopped cilantro
1 teaspoon ground cumin
½ teaspoon chili powder, or to taste
½ teaspoon garlic powder
¼ teaspoon salt

Steps:

  • Stir yogurt, sour cream, ketchup, onion, lime juice, cilantro, cumin, chili powder, garlic powder, and salt together in a bowl with a whisk until smooth.
  • Cover bowl with plastic wrap and refrigerate until chilled, at least 10 minutes.

Thankfully, it turned out, and the combination of salsa and ranch dressing is one we now use on sandwiches burgers and more, " writes Heather Byers from Pittsburgh, Pennsylvania.

2 cups torn romaine
3/4 cup frozen corn, thawed
1/3 cup canned black beans, rinsed and drained
1 medium tomato, chopped
1 celery rib, chopped
1 medium carrot, thinly sliced
1/4 cup torn curly endive
1/3 cup salsa
2 tablespoons reduced-fat sour cream
2 tablespoons reduced-fat ranch salad dressing

Steps:

  • In a salad bowl, combine the first seven ingredients. In a small bowl, combine the salsa, sour cream and ranch dressing. Drizzle over salad and toss to coat.

1 fresh, cored pineapple available in produce department of many markets, chopped or 1 can cut pineapple in natural juice, reserve 1/4 cut of the juice of either product.
1 large green or red bell pepper, seeded and chopped
1/2 red onion, chopped
1/2 seedless cucumber, chopped
2 ribs celery, chopped
1 vine ripe tomato, chopped
1 lime, juiced
1 teaspoon chili powder
1/3 cup extra-virgin olive oil
Salt and pepper
Hot sauce (recommended: Tabasco), to your taste, optional

Steps:

  • Combine chopped pineapple with chopped peppers, onions, cucumber, celery and tomatoes. In a bowl combine reserved pineapple juice with the lime juice and chili powder, whisk in extra-virgin olive oil and season dressing with salt and pepper, to taste. Add in a few dashes of hot saice if you like it spicy! Pour dressing over salad and toss.
