1 container (8 ounces) sour cream
1 packet (1 ounce) Hidden Valley® Fiesta Ranch® Dips Mix
2 cups seeded and diced fresh tomatoes (3 medium)
2 medium-size ripe avocados
Tortilla chips

Steps:

  • Prepare dips mix according to package directions. Mash avocados until smooth. Stir in prepared dip, tomatoes and sour cream.
  • Cover tightly and refrigerate 1 hour. Serve with tortilla chips.

1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, drained, liquid reserved
1 can (16 oz each) Rosarita® Traditional Refried Beans
1 container (12 oz each) refrigerated guacamole
1 container (16 oz each) sour cream
1 pkg (1.25 oz each) taco seasoning mix
1 cup shredded Cheddar and Monterey Jack cheese blend
1 can (2.25 oz each) sliced ripe olives, drained
1/4 cup sliced green onions
Tortilla chips, optional

Steps:

  • 1. Reserve 1/2 cup drained tomatoes; set aside. Blend remaining tomatoes and reserved liquid with beans in medium bowl.
  • 2. Spread bean mixture in 8x8-inch glass baking dish or round casserole dish. Top with guacamole.
  • 3. Blend together sour cream and seasoning mix in small bowl. Spread over guacamole. Top evenly with layers of cheese, olives, green onions and reserved tomatoes. Chill 2 hours prior to serving. Serve with tortilla chips, if desired.

Found this delicious recipe in an insert from ol' Elsie Borden. It was stuck inside a cookbook, the recipes dated to 1994! Love the sour cream/taco seasoning combination tucked in between the beans and the avocado spread!

2 (15 ounce) cans refried beans
1 (4 ounce) can chopped green chilies, undrained
1 (16 ounce) container sour cream
1 package taco seasoning mix
3 ripe avocados, pitted and peeled
2 tablespoons lime juice or 2 tablespoons lemon juice
1/2 teaspoon seasoning salt
1/8 teaspoon garlic salt
shredded cheddar cheese
chopped tomato
sliced green onion
sliced green olives
sliced black olives

Steps:

  • In small bowl, combine refried beans and chilies and spread on large serving plate.
  • Combine sour cream and taco seasoning, spoon over bean mixture.
  • In small bowl, mash avocados and stir in lemon or lime juice and seasoning salts, then spread over top of sour cream mixture.
  • Cover and chill several hours.
  • Just before serving, garnish with cheese, tomatoes, green onions and olives, then serve with taco chips.
  • Makes 12 to 15 servings.

2 containers (7 oz each) refrigerated guacamole
1/4 cup sour cream
1 large yellow bell pepper
1 baby-cut carrot
2 pretzel nuggets
Broccoli florets
Grape tomatoes

Steps:

  • To assemble football field: Spread guacamole evenly onto rectangular serving platter. Spoon sour cream into decorating bag fitted with writing tip. Pipe goal lines, numbers and borders onto guacamole.
  • Cut 6 (1 3/4x1/2-inch) strips from bell pepper. Place 2 strips on each side of field for goal posts. Pipe small amount of sour cream on each bottom corner of remaining 2 bell pepper strips; place on tops of goal posts. Cut carrot in half for safety cones; place on one side of each goal post. Place 1 pretzel nugget on each end of the field. Arrange broccoli florets and tomatoes along side lines for people. Serve with additional vegetables and pretzel nuggets.

1 pound lean ground turkey
1 envelope reduced-sodium taco seasoning
2/3 cup water
1 can (16 ounces) fat-free refried beans
1-1/2 cups shredded lettuce
1 jar (16 ounces) salsa
1 cup shredded reduced-fat cheddar cheese
4 canned jalapenos, sliced
1 cup reduced-fat sour cream
1/3 cup sliced ripe olives
1 package (13-1/2 ounces) tortilla chips

Steps:

  • In a nonstick skillet coated with cooking spray, cook turkey until no longer pink; drain if necessary. Stir in taco seasoning and water; cook and stir for 2-4 minutes or until most of the liquid has evaporated. , Spread refried beans on a 12-in. serving platter. Top with the turkey, lettuce, salsa, cheese, jalapenos, sour cream and olives. Serve with chips.
