1 (6 7/8 ounce) package of spanish Rice-A-Roni
1 (14 1/2 ounce) can diced tomatoes
1 (15 ounce) can chili with beans
1 (16 ounce) can beef tamales (paper removed)
1 cup shredded cheddar cheese

Steps:

  • Prepare rice according to package directions.
  • Spoon chili into 8 inch square baking dish'.
  • Cut up the tamales into 1 inch pieces. Top the chili with the tamales.
  • Heat mixture (covered) in microwave for 4 minutes on high.
  • Add the rice and cheese on top and finish microwaving until the cheese melts on top-3 minutes on high.

1 pound ground beef
1 medium onion, chopped
1 can (15 ounces) black beans, rinsed and drained
1 cup picante sauce
1/2 teaspoon chili powder
1 can (10-1/2 ounces) reduced-fat reduced-sodium condensed cream of chicken soup, undiluted
1 can (10 ounces) diced tomatoes and green chiles, undrained
1 can (4 ounces) chopped green chiles
1 package (9-3/4 ounces) nacho-flavored tortilla chips or plain tortilla chips, crushed
1 cup shredded sharp cheddar cheese
1 cup shredded Monterey Jack cheese
Optional: Cubed avocado and sour cream

Steps:

  • In a large skillet, cook beef and onion over medium heat until beef is no longer pink, 6-8 minutes, breaking up beef into crumbles; drain. Stir in beans, picante sauce and chili powder., In a bowl, combine soup, tomatoes and green chiles. In a lightly greased 2-1/2-qt. baking dish, layer half the chips, beef mixture, soup mixture and cheeses. Repeat layers., Microwave on medium-high, uncovered, until heated through and cheese is melted, about 12 minutes. If desired, top with avocado and sour cream.

1 pound ground beef
1 can (15 ounces) black beans, rinsed and drained
1 can (14-1/2 ounces) diced tomatoes with mild green chiles
1 can (10 ounces) enchilada sauce
1 teaspoon ground cumin
4 tablespoons chopped fresh cilantro or parsley, divided
1-1/2 cups biscuit/baking mix
1-1/2 cups shredded Colby-Monterey Jack cheese, divided
4 bacon strips, cooked and crumbled
2/3 cup 2% milk
1 large egg, lightly beaten
Sour cream, optional

Steps:

  • Preheat oven to 400°. In a 10-in. cast-iron or other ovenproof skillet, cook beef over medium heat until no longer pink, breaking into crumbles, 5-7 minutes; drain. Stir in beans, tomatoes, enchilada sauce and cumin; bring to a boil. Reduce heat; simmer, uncovered, 20 minutes to allow flavors to blend, stirring occasionally. Stir in 2 tablespoons cilantro., In a bowl, combine baking mix, 1/2 cup cheese, bacon and remaining cilantro. Add milk and beaten egg; stir just until a soft dough is formed. 3 cups hot cooked rice
2 large onions, chopped
2 cups shredded Monterey Jack cheese
1 medium head iceberg lettuce, shredded
4 medium tomatoes, chopped
1-1/2 cups chopped ripe olives

  • In a Dutch oven, cook beef over medium heat until it is no longer pink, 5 to 7 minutes; crumbling beef; drain. This is a food that is great for game day. I like to add whole kernel sweet corn to my bowl and sometimes put doritos around it to dip out of the bowl. My husband and kids love this.

11/2 lb ground beef
1 Tbsp montreal steak seasoning
1 tsp table salt
3/4 tsp creole seasoning
1/2 tsp kosher salt
1/4 c taco seasoning mix
1 bag(s) (5) flour tortillas
1 box tortilla pan set
5 c shredded lettuce
1 large tomatoes, chopped
10 Tbsp sour cream, 2 tbsp per bowl
1/2 c salsa per bowl
1/4 c shredded cheese per bowl
2/3 c water

Steps:

  • 1. Preheat the oven to 425 F.
  • 2. Place tortillas inside the tortilla pans, spray with cooking spray and place on a baking sheet. Bake 6 to 8 minutes or until tortillas are golden brown. Bake 4 to 5 minutes if you do not want it that crispy.
  • 3. Meanwhile, season the meat with the montreal steak seasoning, table salt, creole,and kosher salt.
  • 4. Put in a large nonstick skillet on medium high heat, stirring occasionally. Cook 2 minutes or until heated through, stirring occasionally. Drain fat off the meat and add back to the skillet. Put the taco seasoning on the meat and add water. Cook for two minutes.
  • 5. Put the bowls onto plates, put 1 cup of lettuce into each bowls, sprinkle the ground beef into each bowl evenly, sprinkle chopped tomato into each bowl evenly, put 1/4 cup of shredded cheese into each bowls .Then add 1/2 cup of salsa and 2 tbsp of sour cream.

My husband grew up with this meal and still loves it! Kid-friendly and can add or subract ingredients without losing much flavor. We make this all the time.

1 lb ground beef
1/4 cup diced onion
1/2 cup chopped green bell pepper
1 teaspoon chili powder
1/4 teaspoon pepper
1 teaspoon salt
1 (14 ounce) can diced tomatoes
1 (14 ounce) can corn
1 beef bouillon cube
1 cup water
1 cup Minute Rice (uncooked)

Steps:

  • Dissolve the beef boullion cube in the 1 cup of water.
  • Brown beef and drain.
  • To the beef, add onion, green pepper, seasonings, tomatoes, corn, and bullion with water.
  • Bring to a boil.
  • Stir in rice and remove from heat.
  • Cover.
  • Let stand 5 mintues, fluff with fork.
