CUCUMBER SALAD WITH SOUR CREAM AND CHIVES (GERMAN GURKENSALAT)
A cool and refreshing accompaniment to fish or meat dishes, this classic cucumber salad is so simple and good! You can sub dill for the chives, if desired. Recipe is an old one that has been handed down through the generations, from my mother and grandmother.

Steps:
- Peel cucumbers and slice them paper thin (or as thinly as possible), and drain if watery.
- In a medium bowl, mix together the sour cream and chives. Add cucumber slices and stir gently to coat.
- Season to taste with salt (go easy on the salt) and pepper.
- Serve immediately, or cover and chill for up to one day.

CREAMY CUCUMBER SALAD
Steps:
- Mix the cucumbers, red onions, and 1 1/2 tablespoons of salt in a bowl. Pour them into a colander and suspend it over a bowl. Wrap the bowl and colander with plastic wrap, and place in the refrigerator to drain for at least 4 hours or overnight. Discard the liquid that collects in the bowl.
- Pour the yogurt into a sieve lined with a paper towel and suspend it over another bowl. Wrap the bowl and sieve in plastic wrap and refrigerate for at least 4 hours or overnight. Discard the liquid that collects in the second bowl.
- When the cucumbers are ready, roll them up in paper towels or a kitchen towel and press the towel lightly to remove most of the liquid. Place the cucumbers and yogurt in a large bowl with the sour cream, vinegar, dill, 2 teaspoons salt, and the pepper. Toss well and refrigerate for a few hours to allow the flavors to blend. Sprinkle with 1/2 teaspoon salt and 1/2 teaspoon pepper and serve chilled.

- Put a large colander in a large bowl. Add the cucumbers and onions to the colander, sprinkle with 1 tablespoon salt and toss until the salt is evenly distributed. Let stand at room temperature for at least 1 hour and up to 2 hours.
- Transfer the cucumbers and onions from the colander to a paper towel-lined baking sheet and pat them dry with another layer of paper towels.
- Whisk together the sour cream, dill, vinegar and a few cracks of black pepper in a medium bowl. Add the cucumbers and onions and toss until coated.

This is a yummy side dish that we always have on Thanksgiving but it's great in the summer as well. The mixture will be soupy; it's supposed to be that way.

FIBER ENRICHED SOUR CREAM & CHIVE CUCUMBER SALAD
This recipe has been in my husbands family since he was a kid. It is a Family Favorite. In trying to eat healthier, I added Chia seeds to this recipe to increase the fiber content & lower the net carbs per serving. By doing that this recipe now has 3 net carbs per serving instead of the original 7. Using a Zero calorie sweetener keeps the sugar down to only 2 per serving, & there are 130 calories per serving. We loved this new version, I was skeptical because of the chia seeds, but my husband said it tasted the same. The chia seeds absorbs some of the liquid in the cukes as the salad sits.

- Wash Cucumbers and slice thinly as desired. Add to a large bowl.
- Using a food processor or by hand wash trim & chop the green onions. Add to a medium size bowl.
- Then add in the sour cream, splenda and spices. Stir to mix together completely.
- Add in about half of the sliced cucumbers and stir to blend into the sour cream mixture.
- Then add in the remaining sliced cucumber, & the chia seeds and stir to mix together completely.
- MY FITNESS PAL.Pour mixture into a medium size container. Garnish with sliced cucumbers and a few chopped green onions. Cover and refrigerate for at least 2 hours or so before serving to allow the flavors to blend together.
