This alfredo fettuccine with ham is the best ham pasta - versatile for both deli ham and leftover ham from holidays. This ham pasta involves a classic alfredo sauce and thinly sliced zucchini. Who wouldn't love spicy fettuccine alfredo with vegetables and ham?

½ cup Unsalted butter (1 stick)
1 cup Heavy cream
2 Egg yolks
1 teaspoon Salt
1 teaspoon Pepper
1 ½ tablespoon Cajun seasoning (optional)
½ pound Deli ham (about 8 slices, thinly sliced into strips (or leftover baked ham, thinly sliced) )
2 Zucchini (2 small or 1 large zucchini, shaved into ribbons with vegetable peeler or sliced very thin with knife )
2 Roma tomatoes (diced)
¾ cup Parmesan (shredded; divided)
8 ounces Fettucini noodles (cooked in salted water)

Steps:

  • In a large skillet, combine the butter, cream and egg yolks and whisk until smooth, cooking over low heat.
  • As the butter melts and the mixture becomes thickened, add seasonings to the sauce while whisking continuously. (Take care not to boil the sauce or leave unattended.)
  • Mix the thinly-sliced ham and the zucchini ribbons to the sauce.
  • Add the diced tomatoes and the shredded Parmesan. Stir until cheese melts.
  • Add drained noodles to the sauce and stir until well coated.
  • Optional: Garnish with additional black pepper and Parmesan.
  • Serve with crusty bread and side salad.

Wonderfully easy dish that tasted great. I'm not a ham fan but my family is. The ham actually gave the dish a great flavor along with the addition of beef broth in the last few minutes of cooking.

1/4 cup olive oil
2 lbs onions, thinly sliced
4 cups thinly sliced green cabbage
1 1/2 cups diced smoked ham (such as black forest)
3/4 lb fusilli or 3/4 lb rotini pasta
1/3 cup grated parmesan cheese
1/2 cup canned beef broth (about)

Steps:

  • Add oil and onions to a skillet and saute until onions are dark brown, about 25 minutes.
  • Add cabbage and ham and saute until cabbage wilts, about 8 mintues.
  • Meanwhile, cook pasta in heavy large pot of boiling salted water until just tender but still firm to bite.
  • Drain, return pasta to same pot.
  • Add onion mixture and cheese to pasta.
  • Toss over medium heat until warmed through, adding broth by 1/4 cupfuls to moisten if dry, about 4 minutes.
  • Season pasta to taste with salt and pepper and serve.

This delicious recipe is from an Italian cooking book that I just recently received from Barnes & Noble.com Extremely easy recipe to make and can cut in 1/2 if serving as a side dish. My DS & DH just devoured this last night!

1/2 cup prosciutto or 1/2 cup unsmoked ham
1/4 cup butter
2 shallots, finely chopped
salt & pepper
2/3 cup heavy cream
12 ounces fettuccine
1/2 cup parmesan cheese

Steps:

  • Cut ham into small chunks.
  • Melt butter in a medium frying pan.
  • Add shallots& ham and cook until golden.
  • Season with salt& pepper, to taste.
  • Stir in the cream and keep warm over low heat while the pasta is cooking.
  • Boil the pasta in a large pan of boiling water.
  • Cook"al dente".
  • Drain pasta& mix with sauce.
  • Serve immediately.

1 tablespoon vegetable oil
1 clove garlic, finely chopped
2 medium green onions, sliced (2 tablespoons)
6 oz thinly sliced cooked ham, cut into 1/4-inch strips
1 cup frozen sweet peas
1/3 cup plain low-fat yogurt
1/4 cup ranch dressing
2 tablespoons milk

Steps:

  • Cook and drain fettuccine as directed on package.
  • In 12-inch skillet, heat oil over medium-high heat. Add garlic and onions; cook 1 minute. Add ham and peas; cook 1 to 2 minutes, stirring frequently, until hot.
  • Reduce heat to low. Stir in yogurt, dressing and milk. Add fettuccine; cook 2 to 3 minutes, stirring constantly, until hot.

1/2 pound fettuccine
1 onion, chopped
2 cups chopped Napa cabbage
1 tablespoon vegetable oil
1/4 pound cooked ham, chopped
1/2 teaspoon caraway seeds
1/3 cup heavy cream

Steps:

  • In a large saucepan of salted boiling water cook the fettuccine until it is al dente, reserve 1/2 cup of the cooking water, and drain the pasta well. While the pasta is cooking, in a heavy skillet cook the onion and the cabbage in the oil over moderate heat, stirring, until the vegetables are golden, stir in the ham and the caraway seeds, and cook the mixture, stirring occasionally, for 2 minutes, or until the cabbage is tender. Add the cream and simmer the mixture for 1 minute. In a large bowl toss together the fettuccine, the ham mixture, and salt and pepper to taste and add enough of the reserved cooking water to thin the sauce to the desired consistency.
