5 pounds potatoes, cut into wedges
6 cloves garlic, minced
¾ cup olive oil
1 cup water
¼ cup fresh lemon juice
sea salt to taste
ground black pepper to taste
1 ½ tablespoons dried oregano
1 teaspoon chopped fresh mint
1 (8 ounce) package crumbled feta cheese

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C). Lightly oil a large baking dish.
  • Stir the potatoes, garlic, olive oil, water, lemon juice, salt, and pepper together in a bowl until the potatoes are evenly coated; pour into the prepared baking dish.
  • Roast in the preheated oven until the potatoes begin to brown, about 40 minutes. Season the potatoes with the oregano and mint. If the dish appears dry, pour another 1/2 cup water into the dish. Return to the oven and bake about 40 minutes more. Top with the crumbled feta cheese to serve.

3 tablespoons olive oil
2 tablespoons balsamic vinegar
1 tablespoon lemon juice
1 tablespoon Greek seasoning
2 teaspoons kosher salt
½ teaspoon freshly ground black pepper
½ teaspoon garlic powder
½ teaspoon dried oregano
½ teaspoon ground thyme
4 large russet potatoes, peeled and diced into 1-inch cubes
3 ounces crumbled feta cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine olive oil, balsamic vinegar, lemon juice, Greek seasoning, salt, pepper, garlic powder, oregano, and thyme in a large plastic bag or bowl. Add potatoes and shake until potatoes are coated.
  • Place into a baking dish that's large enough to accommodate potatoes in a single, snug layer.
  • Bake in the preheated oven for 40 minutes, stirring every 10 minutes. Top with feta cheese. Return to the oven and bake for another 5 minutes. Serve.

2 lbs small red potatoes, cut into quarters
2 tablespoons olive oil
2 tablespoons fresh thyme, chopped
1/4 teaspoon black pepper
2 (14 ounce) cans artichokes, drained and cut into quarters
1 yellow onion, cut into 1-2 inch pieces
1/2 cup feta cheese, crumbled

Steps:

  • Preheat oven to 425 Farenheit. Spray a baking sheet with cooking spray.
  • Combine the potatoes, olive oil, thyme and pepper in a bowl and turn to coat. Pour the potato mixture onto the baking sheet.

1/2 head cauliflower, trimmed and broken into florets
6 -8 small yellow potatoes, such as Dutch or fingerling
1 teaspoon smoked paprika
1 teaspoon cumin
1 teaspoon kosher salt
1 teaspoon lemon pepper
2 tablespoons olive oil
2 tablespoons lemon juice
1/4 cup fresh cilantro, chopped
1 cup feta cheese, crumbled

Steps:

  • Preheat oven to 425 °.
  • Place cauliflower and potatoes in a shallow baking dish large enough to accommodate as a single layer. Drizzle about 2 tblsp of olive oil over them. Sprinkle with smoked paprika, cumin, a couple of good pinches of salt and lemon pepper. Toss to coat evenly. Roast for about 20-25 minutes occasionally shaking and stirring to rotate potatoes and cauliflower throughout. When potatoes are fork tender and cauliflower is deep golden brown remove from the oven. While oven is still hot place 2 pita breads on oven rack and let toast until slightly crispy and charred. Meahwhile sprinkle lemon juice and cilantro and feta over the potatoes and cauliflower and toss together.
  • Serve with toasted pita and a dollop of hummus on the side.
