- Cut cucumbers in half lengthwise. Using a spoon, remove seeds and discard. Cut cucumbers into 1/2-in. cubes; place in a bowl. Sprinkle with salt. Stir in onions. Combine the cheese, lemon juice, oil and pepper; add to cucumber mixture and stir gently.

- Beat the cream cheese with electric mixer until smooth.
- Add feta cheese and beat until well blended.
- Lay a large sheet of plastic wrap on the countertop.
- Spoon the cheese mixture in the centre of the wrap.
- Roll and shape the cheese into a ball using the plastic wrap as a guide.
- Twist the plastic wrap closed Refrigerate 6 hours or overnight.
- Before serving spread the walnuts on a sheet of plastic wrap large enough to enclose the entire cheese ball.
- Unwrap the cheese ball and roll in the nuts so it is evenly coated.
- Wrap again and set aside to come to room temperature.

MEDITERRANEAN CHEESE BALL
I love the feta and capers in this cheese ball. My mom made it last year for a dinner party she had and it was one of the first things to go. I had to get the recipe from her...she handed me a Southern Living magazine, LOL! So here it is for all of you to enjoy too! I like to serve it with toasted pita wedges. Cook time is chill time.
