2 cups uncooked elbow macaroni (7 ounces)
1/4 cup butter
1/4 cup Gold Medal™ all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon ground mustard
1/4 teaspoon Worcestershire sauce
2 cups milk
2 cups shredded or cubed Cheddar cheese (8 ounces)

Steps:

  • Heat oven to 350°F. Cook and drain macaroni as directed on package.
  • While macaroni is cooking, melt butter in 3-quart saucepan over low heat. Stir in flour, salt, pepper, mustard and Worcestershire sauce. Cook over medium low heat, stirring constantly, until mixture is smooth and bubbly; remove from heat. Stir in milk. Heat to boiling, stirring constanly. Boil and stir 1 minute. Stir in cheese. Cook, stirring occasionally, until cheese is melted.
  • Gently stir macaroni into cheese sauce.
  • Pour into ungreased 2-quart casserole. Bake uncovered 20 to 25 minutes or until bubbly.

This is a macaroni and cheese I first made 3 years ago when I was in California. When I got back to Texas I made it for my mom. This is now her favorite baked macaroni and cheese. She begs me to make it when I come to visit.

2 tablespoons butter
¼ cup finely chopped onion
2 tablespoons all-purpose flour
2 cups milk
¾ teaspoon salt
½ teaspoon dry mustard
¼ teaspoon ground black pepper
1 (8 ounce) package elbow macaroni
2 cups shredded sharp Cheddar cheese
1 (8 ounce) package processed American cheese, cut into strips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt butter in a medium saucepan over medium heat. Saute onion for 2 minutes. Stir in flour and cook 1 minute, stirring constantly. Stir in milk, salt, mustard and pepper; cook, stirring frequently, until mixture boils and thickens.
  • Meanwhile, bring a pot of lightly salted water to a boil. Add macaroni and cook for 8 to 10 minutes or until al dente; drain.
  • To the milk mixture add the Cheddar and American cheeses; stir until cheese melts. Combine macaroni and cheese sauce in a 2 quart baking dish; mix well.
  • Bake in preheated oven for 30 minutes, or until hot and bubbly. Let cool 10 minutes before serving.

1 package (16 ounces) uncooked elbow macaroni
4 slices hearty white bread (4 ounces), torn into large pieces
6 tablespoons butter, cubed and divided
1/2 cup grated Parmesan cheese
1 teaspoon salt, divided
1 teaspoon pepper, divided
1/4 cup finely chopped onion
1 teaspoon ground mustard
1/4 teaspoon cayenne pepper
1/4 cup all-purpose flour
3 cups whole milk
2 cups half-and-half cream
1 cup (4 ounces) cubed process cheese (Velveeta)
1 block (8 ounces) sharp cheddar cheese, shredded
1 block (8 ounces) Monterey Jack cheese, shredded
1 teaspoon Worcestershire sauce

Steps:

  • Preheat oven to 400°. In a stockpot or Dutch oven, cook pasta according to package directions for al dente; drain and return to pan. Pulse bread, 2 tablespoons butter, Parmesan, 1/2 teaspoon salt and 1/2 teaspoon pepper in a food processor until coarsely ground., Meanwhile, in a large skillet over medium heat, melt remaining butter. Add onions and cook until tender, about 3 minutes. Add ground mustard and cayenne; stir until blended. Stir in flour until smooth, about 3 minutes. Slowly whisk in milk and cream; bring to a boil. Reduce heat to medium-low; simmer, stirring constantly, until thickened, about 5 minutes. Remove from heat; stir in Velveeta. Slowly add remaining cheeses a handful at a time, stirring until cheese is melted. Add Worcestershire and remaining salt and pepper. 3/4 cup margarine or 3/4 cup canola oil
3/4 cup flour (can use up to half whole wheat if desired)
6 cups milk, warmed
6 bouillon cubes or 2 tablespoons instant bouillon granules
12 ounces cream cheese
6 cups sharp cheddar cheese, shredded
30 ounces dry pasta, cooked (2 lbs., I like rotini)
1 1/2 cups buttery crackers, crushed (like Ritz)
1/2 cup butter (1 stick) or 1/2 cup margarine, melted (1 stick)

Steps:

  • Make a white sauce: In a large heavy bottomed teflon sauceman or stock pot, melt/warm the 3/4 cup butter or oil over low heat. Add flour and stir until smooth. Cook the mixture until it begins to bubble. Do NOT let brown.
  • Gradually add the milk, stirring constantly. When the sauce has thickened (be patient; this could take 15 minutes or so.), stir in the bouillon.
  • Add in softened cream cheese until smooth.
  • Next add in the cheddar cheese until melted.
  • Finally, stir in the cooked pasta.
  • Press into 3 greased 1 1/2 quart or 2-quart baking dishes. (I like to use disposable foil containers for easy clean-up).
  • Combine cracker crumbs and butter. Store in 3 baggies and attach to macaroni and cheese dish.
  • Label and freeze.
  • To serve: Take out of freezer and thaw in refrigerator the day before serving. Sprinkle cracker mixture over macaroni and bake at 375 degrees for about 30 minutes or until the edges are bubbly.

Well, I modified Recipe #73916 enough that I figured I would post my version! And, as I can't make any small batches in the crock pot, this is OAMC. For a smaller crock pot, or for non-OAMC, this recipe can be cut in half. Enjoy! Note: Servings are main-dish dinner sized portions.

2 lbs uncooked small pasta noodles, should have a cooking time around 13 minutes
2 (12 ounce) cans evaporated milk
1 1/2 cups half-and-half
6 cups milk
1/2 cup flour
4 cups sharp cheddar cheese, shredded
2 cups mild cheddar cheese, shredded
16 ounces Velveeta cheese, diced
1 cup parmesan cheese
8 tablespoons salted butter, cut up
1 teaspoon onion powder
3/4 teaspoon garlic powder
1/2 teaspoon white pepper
1/2 teaspoon salt

Steps:

  • Whisk flour with 1 cup of milk until smooth.
  • Mix everything in (very large) crock pot.
  • Cook 3 to 4 hours on low, or until sauce comes together and pasta is tender. Stir every 30 to 60 minutes, if possible.
  • Freeze leftovers in 2 serving portions.
  • Reheat in microwave safe dish on defrost for 20 minutes, stirring every 5 minutes. At this time, the mac and cheese should be mostly defrosted. Defrost for another 10 minutes or so, stirring every 2.5 minutes or until hot. (I have found this is the best way to reheat frozen mac and cheese with no seperation of the sauce.).

Living on a fixed income, I'm always looking for ways to stretch my tiny budget. It gets pretty tight at the end of the month around here! Since I'm cooking only for myself and DH, I thought I should start hitting the sales and putting some food in the freezer for that austere end of the month time. Since it's not included in my budget, there are no buttered breadcrumbs on top, but feel free to remove the foil and add them during the last 10 or 15 minutes of baking, I'm sure they would be great! This is a basic recipe that you can alter to your own liking or to whatever you have available. Change up the cheese combo to whatever your suits your taste: "aged" cheddar cheese mixed with fontina, monterey jack, sour cream, cream cheese, or whatever you prefer or have available. I have also made this with higher quality chopped hot dogs and got no complaints from DH. I have also substituted 1/2 cup non-dairy creamer mixed with 2-1/2 cups of water for the milk, worked fine -just sayin'!

3/4 lb dry elbow macaroni
1 1/2 teaspoons oil or 1 1/2 teaspoons butter
1 small onion, diced small
1/2-3/4 lb ham, diced small
1/4 lb butter
1/4 cup flour
3 cups milk
1/4 teaspoon nutmeg
1/4 teaspoon cayenne pepper
1/2 teaspoon dry mustard (optional)
1/4 teaspoon salt
1/8 teaspoon black pepper
8 ounces sharp cheddar cheese
4 ounces parmesan cheese or 4 ounces mozzarella cheese, grated

Steps:

  • In a large pot, cook macaroni in boiling water until almost (but not quite) al dente, about 3 minutes less than you would like it done if you were going to eat it right now.
  • drain in colander and rinse well in cold water to stop the cooking process. set aside to drain in colander some more while you finish preparing the other items.
  • over medium-low heat, melt 1-1/2 teaspoons butter or oil (any type) in same pot you just boiled the mac inches.
  • add diced onion. cook and stir frequently until onions just start to become translucent.
  • add diced ham and stir just till warmed. transfer onions and ham to a dish or paper plate and set aside.
  • melt 4 oz butter over medium-low heat in same pot you just cooked onions inches when butter begins bubbling, stir constantly until it stops foaming, 2-4 minutes. (this is step 1 to preventing a grainy, flour taste in the sauce!).
  • have your whisk at the ready! dump in the flour. whisk, whisk, whisk until all lumps are gone and butter/flour mixture turns golden, about 3-5 minutes. (the second step to preventing a grainy, raw flour tasting sauce!) do no allow it to turn brown! your cheesy sauce will taste burnt and gross if you let the roux get dark!
  • dump the milk in all at once and whisk until there are no longer any lumps. add the nutmeg, black pepper and cayenne. increase heat slightly and using your whisk, stir briskly until mixture boils.keep stirring and let it boil for 1-2 minutes (step three to preventing that grainy, icky flour taste!).
  • remove from burner and dump in the onion/ham mixture and the cheeses (or cheese and sour cream/cream cheese). stir to blend.
  • let sit for 5 minutes to cool down a bit.
  • stir in the macaroni to coat well.
  • spoon into buttered pan(s) -- whatever type pan you prefer will work. i got a pack of (4) cheapie aluminum 7" pie pans at the dollar store (perfect size for two people!). i filled (3) for the freezer and still had a good-sized bowl left for hubby to eat tomorrow.
  • cover with aluminum foil and put in freezer.
  • to heat from frozen: preheat oven to 350f. bake for 40-45 minutes if your pan is small (like mine are!) if you froze the entire mixture in one casserole dish, bake for 1 to 1 - 1/2 hours. stir at the 45 minute mark, replace the foil and continue baking.

1 cup finely crushed butter flavored cracker (Ritz)
1/4 cup grated parmesan cheese

Steps:

  • Preheat oven to 400 degrees F.
  • Melt butter in a medium saucepan over medium high heat. Add the flour and cook stirring for 1 minute. Whisk in the milk slowly, then whisk in the Dijon mustard, bring to a simmer and cook for 5 minutes until thick. Stir in the cheeses until completely melted. Then stir in the pasta. Spread into an even layer in an 8"x10" baking dish.
  • In a separate bowl, mix together the cracker crumbs with the parmesan cheese.

This is my kids favorite homemade version of mac and cheese. It does contain canned soup. If you're not a fan - don't try it! This freezes and reheats really well. I usually double this on a cooking day and it fills my 6 quart crock pot to the brim.

1 lb macaroni noodles
10 ounces condensed cheddar cheese soup
8 ounces sharp cheddar cheese, shredded
8 ounces extra-sharp cheddar cheese, shredded
12 ounces evaporated milk
1 cup milk

Steps:

  • Cook macaroni noodles according to package directions. Drain. ( I usually slightly undercook them - until barely al dente).
  • While noodles are cooking, combine soup, cheeses and milks in a crockpot. Stir to combine.
  • Add cooked, drained noodles and stir well.
  • Cover and cook on low for 3 hours.
  • To Freeze:.
  • Cool completely. Place in freezer bags in desired serving sizes. I usually do about 3 cups per bag. Enough for lunches, etc.
  • Seal and freeze.
  • To Serve:.
  • Thaw in fridge. Reheat in microwave or place in baking dish that has been coated with cooking spray. Bake at 350 degrees for 20-25 minutes or until hot.
