DAD'S FAVORITE OATMEAL CHOCOLATE CHIP COOKIES
Part crunchy, part chewy, all mouth watering. It is hard to keep these from disappearing. I use organic flaked coconut for a different texture but regular shredded coconut works well too.

Steps:
- Preheat oven to 350°F.
- Cream butter and sugars together.
- Beat in egg.
- In a separate bowl, mix baking powder, baking soda, coconut, oats and flour.
- Add creamed ingredients to dry and mix well.
- Add chocolate chips.
- Drop by the tablespoon full onto ungreased cookie sheet.
- Bake for 10-15 minutes until golden brown.
- Cool on cookie sheet for a few minutes before removing to wire rack.
- Dip in cold milk for full effect and enjoy!

Recently I had to make some cookies for a party. Much to my dismay, I was out of chocolate chips and had one bag of peanut butter chips I didn't know what to do with. This recipe was (fortunately) a successful experiment as I crossed my favorite brownie and chocolate chip cookie recipes. My family likes it better than both. It tastes something like a peanut butter cup in cookie form.

- Preheat oven to 350 degrees F (175 degrees C).
- Beat butter, shortening, white sugar, and brown sugar with an electric mixer in a large bowl until smooth. Beat the first egg into the butter until completely blended, then beat in the vanilla with the second egg. Mix flour, baking powder, cocoa powder, and salt in another bowl; mix the flour mixture into the butter mixture until just incorporated. - Place racks in upper and lower thirds of oven; preheat to 375°F. Line 2 rimmed baking sheets with parchment paper.
- Whisk flour, baking powder, salt, and baking soda in a medium bowl. Lightly beat eggs and vanilla in a small bowl.
- Using an electric mixer on medium speed, beat butter, granulated sugar, and brown sugar in a large bowl until light and fluffy, 3-4 minutes. Add egg mixture and beat, occasionally scraping down sides of bowl, until mixture is pale and fluffy, 3-4 minutes. Reduce mixer speed to low and gradually add dry ingredients, beating until just incorporated. Fold in chocolate with a spatula.
- Spoon about 12 heaping tablespoonfuls of dough onto each prepared sheet, spacing 1" apart. Chill dough 15 minutes on baking sheets before transferring to oven to prevent dough from spreading too much as it bakes.
- Bake cookies, rotating sheets halfway through, until just golden brown around the edges, 10-12 minutes (cookies will firm up as they cool). Let cookies cool on baking sheets 3 minutes, then transfer to wire racks and let cool completely. Let baking sheet cool completely before lining with fresh parchment and spooning on dough for the third batch of cookies.

- Melt butter in heavy sauce pan until delicately browned. Remove from stove.
- Using handheld electric beater, stir in brown sugar & granulated sugar until well combined.
- Add egg & egg yolk, beating until the color changes slightly.

There are so many recipes here for chocolate chip cookies that I found myself going in circles to see if my exact recipe was posted. I know there isn't one here named Heidi's favorte so here it is! This recipe is not cake like at all but is a soft cookie. It seems to use a larger amount of fat than others posted here and specifically calls for shortening.
