This easy Alfredo sauce is creamy, comforting and coats fettuccine noodles in fine fashion. This recipe is wonderful as is, but sometimes I like to add sliced fresh mushrooms and black olives that have been sautéed in butter and garlic. -Jo Gray, Park City, Montana

4 ounces uncooked fettuccine
3 tablespoons butter
1 cup heavy whipping cream
1/4 cup plus 2 tablespoons grated Parmesan cheese, divided
1/4 cup grated Romano cheese
1 large egg yolk, lightly beaten
1/8 teaspoon salt
Dash each pepper and ground nutmeg
Minced fresh parsley, optional

Steps:

  • Cook fettuccine according to package directions. Meanwhile, in a saucepan, melt butter over medium-low heat. Stir in the cream, 1/4 cup cheese, Romano cheese, egg yolk, salt, pepper and nutmeg. Cook and stir over medium-low heat until a thermometer reads 160° (do not boil). Drain fettuccine; combine with Alfredo sauce and remaining Parmesan cheese. If desired, sprinkle with parsley.

8 ounces dry fettuccine pasta
1 (8 ounce) package cream cheese
¾ cup grated Parmesan cheese
½ cup margarine
½ cup milk
1 teaspoon garlic powder
¼ teaspoon dried basil
1 pinch ground nutmeg

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • In a medium saucepan, combine cream cheese, Parmesan, margarine, milk, garlic powder and basil and stir over low heat until smooth and creamy, 10 to 15 minutes. Toss sauce with pasta and sprinkle with nutmeg. Serve.

1 pound dried fettuccine
2 large egg whites
3/4 cup nonfat ricotta
3/4 cup part-skim ricotta
1/2 cup nonfat yogurt
1/4 cup freshly grated Parmesan
1/2 teaspoon salt, or to taste
1/2 teaspoon freshly ground white pepper, or to taste

Steps:

  • In a 5-quart kettle bring 4 quarts salted water to a boil for pasta.
  • In a blender or food processor blend remaining ingredients until smooth and transfer to top of a double boiler or a metal bowl set over a saucepan of barely simmering water. Heat sauce, stirring constantly, until and instant-read thermometer registers 140°F and remove top of double-boiler of bowl from heat.
  • Add pasta to boiling water and boil until al dente. Reserve 1/ 2cup pasta cooking water and drain pasta in a colander. Return pasta to kettle and add sauce and reserved cooking water, tossing gently until combined well

This is a recipe that I created by modifying my mother's recipe. My boyfriend is a fettuccine Alfredo connoisseur and he scrapes the pan every time! I get nothing but rave reviews when I make this dish. I must warn you, this recipe is not for the health conscious. Enjoy!

24 ounces dry fettuccini pasta
1 cup butter
¾ pint heavy cream
salt and pepper to taste
1 dash garlic salt
¾ cup grated Romano cheese
½ cup grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add fettuccini and cook for 8 to 10 minutes or until al dente; drain.
  • In a large saucepan, melt butter into cream over low heat. Add salt, pepper and garlic salt. Stir in cheese over medium heat until melted; this will thicken the sauce.
  • Add pasta to sauce. Use enough of the pasta so that all of the sauce is used and the pasta is thoroughly coated. Serve immediately.

150 g pasta (penne works well)
2 large mushrooms, sliced
1 small zucchini, sliced
1/2 cup green peas
4 medium tomatoes, cored and chopped
1 spring onion, chopped
200 g ricotta cheese
1/8 cup milk
2 teaspoons hot sauce
2 tablespoons oil

Steps:

  • Heat a large pot of water to boiling and throw in the pasta.
  • Meanwhile, heat 1 tbsp of the oil in a small sauce pan and put in the white part of the spring onion.
  • Fry for about 30 seconds and then add the tomatoes.
  • Bring to a simmer and let cook for about 10 minutes, adding a spoonful of water if the tomatoes get too dry, until you have a sauce.
  • While the tomatoes are simmering, you can lightly fry your veggies in the other tbsp of oil.
  • When the tomatoes have cooked down, add the ricotta, milk and hot sauce.
  • Blend with a hand blender to make the sauce smooth.
  • Drain the pasta and toss with the sauce.
  • Top with the veggies, green part of the spring onion and parmesan cheese if desired.
  • Salt and pepper to taste.

1 package soft tofu
1 jar marinara sauce (your choice)
1 lb rotelle pasta
3/4 cup frozen peas
1 pinch basil
1 pinch oregano
1 pinch red pepper flakes
1/2 cup shredded parmesan cheese

Steps:

  • Place the tofu, marinara sauce, and spices in a blender.
  • Blend until smooth and creamy.
  • Begin to boil the water to cook the pasta.
  • Pour the sauce from the blender into a saucepan and gently warm until it's heated through.
  • When the pasta is still a touch crunchy, pour the frozen peas in with the boiling pasta.
  • When pasta and peas are cooked, drain and mix with your warm sauce.
  • Top with shredded parmesan.
