LOW-CALORIE BUTTERMILK BISCUITS
This is a very quick and easy way to prepare fresh low-calorie bread with any meal. Flavor with dried herbs, if desired.

Steps:
- Preheat the oven to 450 degrees F (230 degrees C). Grease a baking sheet.
- Mix cream cheese and oil in a large bowl. Add all-purpose and whole wheat flours, baking powder, sugar, salt, and baking soda. Mix until large crumbs form. Add buttermilk and mix until dough comes together in a ball. Add up to 1/4 cup more buttermilk if needed.
- Turn dough out onto a work surface and knead until smooth, about 5 minutes. Roll out to 1/2 inch thickness. Use a round cookie cutter to cut out 12 biscuits. Place biscuits on the oiled baking sheet.
- Bake in the preheated oven until golden brown, 10 to 12 minutes. Immediately remove from the baking sheet. Serve warm.

FAT FREE, LOW CAL BISCUITS!
Let me start off by saying HALLELUJAH!! My parents are BIG biscuit eaters, and dinner every night is a battle for me to turn down the biscuits. I adapted this recipe from a traditional "mayo" biscuit, and it is yummy! They come out very fluffy and are not cursed with the nasty baking powder flavor that most healthy biscuits have. I hope to soon experiment with oat flour in this recipe!! This is by far one of my favorite healthified recipes!

- Cut mayonnaise into flour until consistency is crumb-like.
- Add in milk and water, stirring until dough is formed.
- Drop or mold biscuits onto greased pan, and bake at 400 for 12 minutes.

Steps:
- Heat oven to 450 degrees.
- Mix together the dry ingredients in a bowl.
- Cut in the yogurt until like coarse crumbs.
- Add water or milk all at once.
- Stir quickly with fork just until dough starts to stick together.
- Lay dough on lightly floured surface.
- (Dough will be soft).
- Knead gently 10 to 12 strokes.
- Roll or pat dough to 1/2-inch thick.
- Dip biscuit cutter in flour; cut dough straight down.
- Bake on foiled baking sheet for 10 to 12 minutes.
- Makes approximately 10 to 12 biscuits.

LOW FAT BISCUITS (WW)
A lightened up version of a breakfast favorite. You can make it even more points-friendly by substituting whole wheat flour for part of the AP Flour.

Steps:
- Combine dry ingredients in a medium mixing bowl with a whisk.
- Mix in shortening with your fingers until it resembles a coarse crumb (or use a food processor).
- Stir in yogurt and half and half until it just comes together, do not over mix.
- Lay out a sheet of wax paper, parchment paper or freezer paper and dust with flour.
- Dump out dough and coat your hands with flour. Pat out until its about 1" thick.
- Using the paper, fold over the dough and pat out, repeating about 4 times.
- Pat out dough to about 3/4" and cut with a 2" ring cutter.
- Bake in a 400 degree oven for 14-16 minutes.
