VANILLA PUDDING (REDUCED FAT)
I like this recipe because it doesn't include any butter and still has a delicious rich taste. It is also easy since it is made on top of the stove. I modified the instructions after the first review to make them more clear. It is important to stir the pudding the whole time it is cooking.

Steps:
- Combine first 3 ingredients in a saucepan.
- Combine milk and egg in a bowl.
- Gradually add milk mixture to sugar mixture, stirring constantly.
- Cook over medium heat until thick and bubbly, stirring constantly. Cook for one additional minute after bubbling starts, stirring constantly.
- Remove pan from heat; stir in vanilla.
- Serve warm, or place plastic wrap on surface; cool to room temperature.
- Chill thoroughly.

FLUFFY FAT-FREE CHOCOLATE FROSTING
Try this using different flavors of sugar-free pudding. Make certain to completely thaw the Cool Whip before adding to the pudding, if you like a sweeter frosting add in some Splenda or alternative sweetener into the pudding mix. If you are not worried about calories and fat content then this works well using full-fat products, just omit the skim milk powder. The chocolate flavor goes well on top of recipe#209214

- In a bowl mix together 3/4 cup plus 2 tablespoons skim milk with skim milk powder and vanilla; mix until no powder remains in the milk.
- Add in the pudding and mix on low speed or whisk until smooth and thickened (mixture will be fairly thick).
- Using a spatula mix in the thawed Cool Whip topping until completely blended.
- Spread over cake.

NO-FAT CHOCOLATE PUDDING
Found this in the local newspaper just in time to make my Dad his chocolate cream pie for Thanksgiving which he loves. My Dad being a heart patient, I'm looking for ways to lower the fat in everything nowadays.

Steps:
- Combine cocoa, sugar, cornstarch and salt in a large pot.
- Over medium-high heat, gradually blend in milk and vanilla.
- Bring to a boil, stirring constantly.
- Boil and stir until thickened and cornstarch is cooked.
- Pour into individual cups, or a pre-cooked pie shell, and chill in refrigerator until set.
- Note: times might not be correct. I used 20 minute to combine ingred. and stir the pot. Used 35 minute for refrigerator time to set the pudding. Since I haven't made this yet, I don't really know the times.
OOZING CARAMEL SAUCE (FAT-FREE)
I came across this sauce in recipe #80287 for Shaker Bread Pudding with Oozing Caramel Sauce. I plan to try it out as a fat-free topping for vanilla frozen yogurt.

ALMOST FAT FREE BANANA PUDDING!!!
This Banana Pudding is so creamy and delicious, you'd never know unless you made it yourself and saw the fat free ingredients!!! I altered a very fattening, but heavenly delicious recipe found on recipezaar as the #1 rated banana pudding (thank you to the poster, because it was heavenly) and when I made it this way, it tastes not a bit different. I even tried it on my skeptical family and they loved it! I have also included the options to make it into my normal "lite, sugar-free" recipe!

Steps:
- Line a 9 x 13 glass dish with nilla wafers.
- Top them with 3/4 the sliced bananas (leave some to mix in the pudding mixture, or you can line them all on top of wafers).
- In a bowl mix the pudding and milk with a mixer until smooth and creamy, but not too thick, to taste.
- In a separate bowl, mix cream cheese and condensed milk with mixer until smooth.
- Fold whipped topping into pudding mixture.
- Mix cream cheese mixture into pudding mixture.
- If you left any bananas, mix them into the final mixture and pour over the bananas in the dish.
- Refrigerate overnight for best results.
NON-ALCOHOLIC HARD SAUCE
I make this to go along with my "We want some figgy pudding" recipe #124650. It's creamy, salty and sweet(I love salty sweet foods).I usually double the recipe if I am making figgy pudding with it.
