QUICK BARBECUED HAM SANDWICHES

The reader writes to us from Carolina barbecue country, Raleigh, North Carolina, and sends her recipe for Barbecue Ham Sandwiches that has been in her family for over 50 years. "My mother would make a batch of sauce on Saturday, buy the ham, and after church on Sunday, our hungry family would be able to have a fast meal," she writes.

- In a large saucepan, combine the first six ingredients. Cook, uncovered, over low heat for 15 minutes. Stir in ham; heat through. Using a slotted spoon, serve on buns.

- Dump the Chili sauce and Relish into a 2 quart saucepan and heat stirring occasionally. put in the cooked ham a little at a time, stirring to ensure that it is coated with the sauce. Heat to s simmer and serve

My son requested these for supper tonight, never thought of posting a recipe for such an easy sandwich, but maybe there is someone out there who never had one....so easy, tasty, and quick!!

- 1. Dice the onion, add it to about a tbsp of oil in a med sized skillet, brown onion well
- 2. When it is brown, not burnt, add the rest of the ingredients,except the ham, cook for a few minutes till bubbly. Then add the ham, stir well,add the tbsp of butter, stir till melted.Cook just long enough to heat the ham through.
- 3. Fill your rolls and you have a quick and tasty sandwich..

I love ham BBQ sandwiches, but out of all I have ever tried, this one reigns supreme!!! It is so simple, but it is the perfect blend of sweet and tart...oh, it is just fantastic! I like to serve these with home-made french fries...one of my Dad's favorite meals!!

Steps:
- In medium saucepan, boil all ingredients except ham for 20 minutes.
- Drop chipped ham into mixture and add seasonings.
- Boil long enough to heat through (about 5 minutes), mixing to coat ham with sauce mixture.
- Serve on fresh kaiser rolls (I like mine with a slice of American on top.. yummy!!!).
