MAPLE BAKED BEANS WITH BACON image

Number Of Ingredients 13

1 lb navy beans
3/4 cup newcastle brown ale or other dark beer
2 tblsp dijon
1tblsp worcestershire
1 Jalapeno
1 medium sweet onion chopped
4 cloves of garlic minced
1/4 cup molasses
1/4 cup maple syrup
1/4 cup Ketchup
1/4 cup smokey bbq sauce
Salt and pepper to taste
110 g portuguese bacon, half sliced thick half chopped

Steps:

  • Preheat oven to 300 Soften navy beans using quick preparation method, In a large dutch oven or pot cook the chopped portion of the bacon until crisp, reserve 1 tbsp of fat in pot. Saute onion,garlic and pepper in the dutch oven at medium low heat for 10 minutes stirring occasionally and scrapping bits from bottom of pan. In a separate bowl combine remaining ingredients. When onion mixture is done lay all but 2 bacon slices on the bottom of the pot moving the onions to fit, add the beans and liquid mixture adding enough water to the pot to cover the beans. Cover the pot and put in oven for 4-5 hours checking occasionally to add water if needed. Remove lid for last 1/2 hour of cooking
