3 cups potatoes, shredded
3/4 cup shredded low-fat cheddar cheese
3 ounces Canadian bacon, chopped
1/2 cup green onion, sliced
4 whole eggs, beaten
12 ounces evaporated nonfat milk
salt & pepper

Steps:

  • Preheat oven to 350°F.
  • Spray a 8x8-inch pan with nonstick cooking spray.
  • Arrange potatoes at the bottom of the dish.
  • Sprinkle with cheese, Canadian bacon and green onions.
  • In large mixing bowl, combine eggs, milk, salt & pepper; pour over potato mixture in dish.
  • Bake uncovered in a 350°F oven for 40 minutes or until center appears set.
  • Let stand 5 minutes before cutting.

Mmmmm....hash browns, ham and eggs; just like down on the farm, but you only need one pan! This needs to chill overnight, so plan ahead. Prep. time does not reflect refrigeration time.

24 ounces frozen hash brown potatoes
8 eggs, beaten
1 cup milk
1 1/2 cups ham, cut up into 1 inch pieces
8 ounces shredded cheddar cheese
1/2 cup onion, chopped
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • In a 9 x 13 greased baking pan, layer potatoes, ham, onion and cheese.
  • In a medium bowl, beat eggs; add milk, salt and pepper to eggs; beat well until thoroughly incorporated.
  • Pour over potato/ham layers.
  • Cover and refrigerate overnight.
  • To prepare: Preheat oven to 350 degrees; remove cover and bake for approximately 60 minutes.

A winning combination for a delicious hearty breakfast for holidays, family gatherings or a special breakfast at home. Prepare the casserole the night before serving and pop it in the oven while coffee is brewing the following morning.

3 c simply potato hash browns or south west flavored diced potatoes
1 c diced ham
2 c montery jack cheese
1 bunch scallions - chopped
4 eggs- beaten
1 can(s) evaporated milk
3/4 c sweet red pepper
1/2 tsp thyme, dried

Steps:

  • 1. Grease a casserole dish Place bag of simply potatoes on bottom of casserole, flatten with fingers to make a crust of sorts in the pan
  • 2. Cover potatoes with ham cubes,red pepper, scallions and 1 1/2 cups of cheese
  • 3. Combine the eggs with evaporated milk and thyme pour over vegtables and meat. Cover tightly and place in fridge over night.
  • 4. Bake in preheated 350 oven for 45-50 minutes UNCOVERED or until set Let cool in casserole for 10-15 minutes before slicing Enjoy!

3 cups frozen shredded hashbrowns
1 cup shredded Cheddar or Monterey Jack cheese
1 cup cooked ham or bacon, diced
1/4 cup green onion, diced
4 eggs, beaten
1 (12-ounce) can evaporated milk
1/4 teaspoon pepper
1/8 teaspoon salt

Steps:

  • Arrange hashbrowns evenly in the bottom of a greased 13"x9" baking pan. Sprinkle with cheese, ham or bacon and onion; set aside. Combine eggs, milk, pepper and salt in a mixing bowl; blend well. Pour egg mixture over potato mixture; cover and refrigerate for several hours or overnight. Bake, uncovered, at 350 degrees until center is set, 40 to 45 minutes if chilled several hours or 55 to 60 minutes if chilled overnight. Tip: Egg dishes are a perfect way to use up tasty tidbits from the fridge...ham, deli meats, chopped veggies and cheese. Warm briefly in a skillet and set aside for an omelet filling or scramble the eggs right in.
