This bread is loved by all who's tried it, especially my kids. I've handed out so many copies of this recipe over the years. It certainly doesn't last long. I made 3 mini loaves and my son already has the first one demolished...LOL! He wouldn't wait until it cooled for me to frost, as you can see in the pictures. :) If you love the combo of peanut butter and banana's, you will love this bread. 1 cup(s) peanut butter
1/4 cup(s) brown sugar
1 - egg
1/2 cup(s) sour cream
1 teaspoon(s) vanilla
1 1/2 cup(s) mashed ripe bananas
1 1/2 cup(s) flour
1/4 teaspoon(s) salt
1 teaspoon(s) baking soda
1/2 cup(s) peanut butter chips
PEANUT BUTTER GLAZE
1/4 cup(s) cream or milk
1/2 cup(s) confectioners' sugar
3 tablespoon(s) slightly heaping - peanut butter
1/2 teaspoon(s) vanilla

Steps:

  • Preheat oven to 350 degree F. Spray a 9 x 5 loaf pan with non stick cooking spray. I use bakers joy. In a large bowl, beat the peanut butter with the brown sugar until light and fluffy or until sugar is well incorporated. In another bowl, sift the flour, soda and salt. Set aside.
  • Once the sugar and peanut butter is creamed, beat in the banana, egg, sour cream and vanilla. Mix well. To this add the flour mixture and only beat until blended. Fold in the peanut butter chips.
  • Spread into prepared loaf pan. Bake for 55 minutes to 1 hour, or until pick comes out clean. If it starts getting too brown, cover with foil and return to oven.
  • In a small bowl, whisk all glaze ingredients until creamy. Add more sugar or milk to get desired consistency. Remove bread from oven and place on cooling rack for 5 minutes, then remove from pans. Once cool, glaze.
  • Enjoy with a cup of coffee or a nice glass of ice cold milk.

½ cup butter, softened
1 cup white sugar
2 eggs
½ cup peanut butter
2 bananas, mashed
2 cups all-purpose flour
1 teaspoon baking soda
½ cup chopped walnuts

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 5x9 inch loaf pan.
  • In a large mixing bowl, cream together butter and sugar. Add eggs; beat well. Stir in peanut butter, bananas, flour and baking soda until blended. Fold in walnuts. Pour into prepared pan.
  • Bake at 325 degrees F (165 degrees C) for 70 minutes, or until a toothpick inserted into center of the loaf comes out clean. Remove to a wire rack to cool.

1 cup mashed very ripe banana
2 eggs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 4x8-inch loaf pan.

Peanut butter stands in for butter and oil in this quick bread - and also makes for an indulgent glaze.

Cooking spray
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon fine salt
1 cup smooth peanut butter
1/2 cup packed light brown sugar
1/2 cup granulated sugar
1 large egg
1 teaspoon pure vanilla extract
3 very ripe bananas, mashed
1/3 cup smooth peanut butter
3 tablespoons unsalted butter
1 tablespoon confectioners' sugar, sifted
3 tablespoons honey-roasted peanuts, chopped

Steps:

  • For the bread: Preheat the oven to 350 degrees F. Spray a 9- by 5-inch loaf pan with cooking spray.
  • Whisk together the flour, baking soda, cinnamon and salt in a medium bowl.
  • Beat together the peanut butter, brown sugar and granulated sugar with an electric mixer on medium-high speed in a large bowl until smooth. Beat in the egg and vanilla, then fold in the mashed banana. Add the flour mixture, and beat on medium-low until just combined (it's OK if there are some lumps).
  • Transfer the batter to the prepared loaf pan, and bake until the bread is golden brown and has split at the top and a toothpick inserted in the center comes out clean, 1 hour 10 minutes to 1 hour 20 minutes. Run a knife around the edges, and let cool completely in the pan on a rack. (You can tent the bread with foil if it begins to brown too quickly.)
  • For the glaze: When the bread has cooled, combine the peanut butter, butter and confectioners' sugar in a medium microwave-safe bowl, and microwave in 30-second increments, stirring after each, until smooth. Let the glaze sit until it has stiffened up a bit but is still spreadable. Spread over the top of the bread, and sprinkle the peanuts on top. Let sit for 10 minutes to set up before slicing. The bread can be stored at room temperature in an airtight container for up to 3 days.
