Moroccan Spiced Lentils image

Number Of Ingredients 16

2 cups water
1 cup lentils, rinsed and drained
3 cloves garlic
1/2 medium onion
1 large red bell pepper, chopped
1 celery and/or carrots, chopped small
2 tablespoons tomato paste
1 teaspoon paprika, smoked or sweet
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1 teaspoon ground ginger
1/2 teaspoon ground termeric
1 pinch cayenne pepper
1 1/2 tablespoon apple cider vinegar (or lemon juice)
3/4 cup parsley or cilantro, freshly chopped
1 teaspoon salt

Steps:

  • Cook lentils first by bringing water to a boil and adding lentils. Bring back to a boil. Then reduce heat to low and simmer (uncovered) for about 20 minutes or until lentils are tender.
  • In the meantime, sauté the onion and garlic in oil.
  • Add the spices, and saute for another minute.
  • Stir in the tomato sauce and a bit of water.
  • Add the vegetables, and simmer, covered, until just soft.
  • Add the salt, and then combine the vegetables into the lentils.
  • Add the apple cider vinegar.
  • Top with cilantro/parlsley.
