1 1/2 pounds ground beef
1/2 cup fresh bread crumbs
1 egg
1 onion chopped
1 teaspoon salt
1/4 teaspoon black pepper
Two 8-ounce cans tomato sauce
1/2 cup water
3 tablespoons vinegar
3 tablespoons brown sugar
2 tablespoons mustard
2 tablespoons Worcestershire sauce

Steps:

  • Mix together beef, crumbs, egg, onion, salt, pepper and 1/2 of tomato sauce. Form into loaf and put into shallow pan. Combine rest of the tomato sauce and all the other ingredients. Pour over loaf. Bake in a preheated 350 degree oven for 1 hour and 15 minutes. Baste occasionally.

2 beaten eggs
3/4 cup milk
2/3 cup fine dry breadcrumb
2 tablespoons grated onions
1 teaspoon salt
1/2 teaspoon ground sage
1 1/2 lbs lean ground beef
1/4 cup catsup
2 tablespoons brown sugar
1 teaspoon dry mustard
1/4 teaspoon ground nutmeg

Steps:

  • Combine eggs with milk, bread crumbs, onion, salt, and sage, and meat.
  • Mix well and shape into a 9x5 inches.
  • rectangle or oval.
  • Carefully place into slow cooker pot.
  • Cook on low for about 6-7 hours.
  • Combine sauce ingredients and pour over meat loaf and cook on high for about 15 minutes.

1 (10 1/2 ounce) can condensed vegetable beef soup, undiluted
1 egg
1/4 cup breadcrumbs
2 lbs ground beef

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Drain the sauce from the vegetables/pasta of the vegetable-beef soup and reserve.
  • In a large bowl, stir together the egg, vegetables/pasta from the soup, and breadcrumbs.
  • Add the ground beef and mix until well blended.
  • Shape meat mixture into a rounded loaf shape and place in a baking dish.
  • Pour reserved sauce from the soup over the loaf.
  • Bake, uncovered, at 350 degrees Fahrenheit for 1 hour.

1/2 lb ground beef
1/2 lb ground veal
1/2 lb ground pork
2 c fresh bread crumbs, cubed
1 c milk
1 egg, beaten
1 Tbsp worcestershire sauce
1/4 c minced onion
1 1/4 tsp salt
1/4 tsp freshly ground pepper
1/4 tsp dry mustard
1/4 tsp dried sage
1/4 tsp celery salt
1/4 tsp garlic salt
3 Tbsp ketchup

Steps:

  • 1. Heat oven to 350. Spray 9x5" loaf pan with cooking spray.
  • 2. In large bowl, combine beef, veal, pork and bread cubes; mix well. In another large bowl, combine milk, egg and Worcestershire sauce; mix well. Pour milk mixture into beef mixture; mix well.
  • 3. In small bowl, combine onion, salt, pepper, mustard, sage, celery salt and garlic salt; mix well. Stir into meat mixture.
  • 4. Form mixture into loaf pan; drizzle with ketchup. Bake 1 hour and 15 minutes or until internal temp reaches 160 degrees.

3 lbs ground beef
2 eggs
1 medim onion, diced
2 tsp garlic salt
3/4 tsp ground black pepper
1 - 8 oz can(s) tomato sauce
1/4 c ketchup
3 c corn flakes, crushed after measuring. 1 c. crushed
FOR THE SAUCE
1 - 8 oz can(s) tomato sauce
1 can(s) water
2 Tbsp white wine vinegar
2 Tbsp splenda blend brown sugar
2 Tbsp prepared yellow mustard

Steps:

  • 1. Preheat oven to 350. Into a large bowl combine ground beef, eggs, diced onion, tomato sauce, ketchup, garlic salt, pepper and crushed corn flakes. Mix well.
  • 2. Pour out the meatloaf into a 9 x 13 baking dish and form into a large loaf making an indentation in the top of the meatloaf for the sauce. (see photo)
  • 3. Now make the sauce. Whisk all the sauce ingredients together: tomato sauce, water, vinegar, splenda brown sugar and mustard
  • 4. Pour the sauce over the meatloaf in your pan.
  • 5. Make sure you get some in the indentation on top of the meatloaf.
  • 6. Cover with foil and bake 2 hours. BASTE OCCASIONALLY! Remove foil during the last 30 minutes to allow the sauce to thicken.
  • 7. Remove from oven and let sit uncovered for 5 minutes before cutting.

CROCK POT FAMILY FAVORITE MEATLOAF

Instead of fine dry bread crumbs I used 5 grain soda crackers whisked in the blender for the bread crumbs. Instead of grated onion I used finely chopped up green onions, and 2 cloves of mashed garlic and black pepper and about a 1/4 cup grated parmesan cheese. Simple ingredients and yet quite a tasty meatloaf. I also ground my own beef. I really like the addition of freshly ground nutmeg in the sauce.

This meatloaf has been my creation since I was 12 years old and started cooking. I typically just throw it together without mixing and my family always enjoys it more than any others I've tried. (Except my son, who thoroughly enjoys Hawaiian meatloaf!)

455 g lean ground turkey
1/2 cup rolled oats (not instant or quick)
60 g egg white substitute
1/2 cup frozen peppers and onions
1/8 cup ketchup (I use sugar free)
2 tablespoons prepared mustard (French's here!)
salt
pepper
1 zucchini
1 yellow squash

Steps:

  • Toss all ingredients in a large bowl and mix together using either a fork or clean hands.
  • Roll up 5 sheets of tin foil, placing 3 across the bottom of the crockpot and 2 crossing the others. This gives you a handle to pick the meatloaf up out of the crock and also allows the oils to drain from the meat.
  • Form the mixture into a loaf and set in crockpot on the tinfoil "creation". Add sliced zucchini and squash along the top.
  • Cover, cook on low 8-10 hours.
  • Enjoy and come back to let me know about it! :D.
  • (Note: I use my hand and cut the yolk in 1/2 and then sub 1TBS of egg whites to make it a little lower in cholesterol.).

MEATLOAF:
2 1/2 lbs. good quality lean ground beef (I used 93/7)
1 cup freshly ground white bread crumbs* (4 slices, crusts removed)
1/2 cup crushed saltine crackers* (12 single crackers)
1/2 cup very finely chopped yellow onion
1 jumbo egg, beaten
1 (8 oz) can tomato sauce (I use Hunt's)
2 teaspoons salt, or to taste
1/4 teaspoon black pepper, or to taste (I added a little more)
TOPPING:
2/3 cup ketchup (I use Hunt's)
1/2 cup water
1 tablespoon dark brown sugar
1 tablespoon yellow table mustard (I use French's)
1 tablespoon white vinegar

Steps:

  • Pulse the bread slices in a food processor until semi-fine crumbs then spread them out on a jellyroll pan to dry out a bit while you prep the other ingredients. (I put them in a slightly warm oven (not on) until needed). In a small bowl, whisk together all the Topping ingredients. Set aside. Remove breadcrumbs from the oven, then preheat oven to 325° F. In a large mixing bowl, whisk the egg well; add the remaining meatloaf ingredients and mix lightly until combined. (Do not overmix or the meatloaf will be tough.) Dump mixture into a shallow baking dish and lightly shape it into a log or circle about 4" high. Coat top and sides of meatloaf with sauce. You can either brush it on or spoon some on top and smooth it onto the sides with the back of the spoon. Reserve the remaining sauce for basting as the meatloaf cooks. Bake on center oven rack for about 1 1/2 hours, or until center or thickest part reaches 165-170° on a meat thermometer, basting 2 or 3 times with the sauce periodically during bake time. (When mine was almost done, I removed it from the original baking dish (to get it out of the greasy drippings) with a wide spatula onto a rimmed pizza pan then basted the final time and finished baking. Remove from oven and let rest 5-10 minutes before slicing. Serve with homemade mashed potatoes or mac and cheese and a green vegetable. About 8 servings. *NOTE: I think you could use all saltine crackers, or all bread crumbs instead of using both, if desired, though I have not made it that way yet.
