I got this from a Yahoo recipe sight (another mom's recipe). I like using the sliced apples, instead of applesauce. Serve with salad, bread and your choice of veggies.

1 lb Polish sausage or 1 lb kielbasa
3 -4 tablespoons honey
3 -4 tablespoons cider vinegar
3 -4 tablespoons yellow mustard
2 tablespoons dried onion
3 -5 sliced potatoes, depending on size or 3 -5 sliced yams
1/2 cup unsweetened applesauce or 2 large apples, sliced

Steps:

  • Mix the honey, cider vinegar and mustard in a bowl until well blended.
  • Slice the sausage and add to a medium heat skillet.
  • Pour sauce over and sprinkle with onion.
  • Add sliced potatoes and apples.
  • Cover and simmer until potatoes are tender.

Chicken apple sausage, sweet potatoes, apples...so many wonderful fall flavors packed into one skillet! Super easy to make and tasty! Garnish with more brown sugar if you like.

½ teaspoon vegetable oil
5 links precooked apple chicken sausage, sliced into rounds
2 sweet potatoes, diced
2 apples, diced
¼ cup water
¼ cup brown sugar
½ teaspoon ground cinnamon
¼ teaspoon salt
1 pinch ground black pepper

Steps:

  • Heat oil in a large, deep skillet over medium-high heat. Add sausage slices and cook until browned, about 5 minutes. Remove sausage and set aside.
  • Add sweet potatoes and half the water to the skillet; boil for 5 minutes. Stir in the sausage, apples, remaining water, sugar, and cinnamon. Season with salt and pepper; reduce heat to medium. Cover and cook, stirring occasionally, until potatoes are soft, 10 to 15 minutes. Serve hot.
