Marinade:
1 c dry red wine
1/2 c butter, melted
1-4 lb eye-of-round-roast
1 T salt
1 teas pepper
Horseradish Cream:
1 8-oz cream cheese, softened
1 1/2 T prepared horseradish
2 teas Dijon mustard
For horseradish sauce: Combine all ingredients, stirring until smooth. Cover and chill at least 2 hours.

Steps:

  • Combine wine and butter in a large heavy-duty zip-top plastic bag, add roast. Seal and chill at least 8 hours or up to 24 hours, turning occasionally. Remove roast from marinade; discarding marinade. Place roast in a 13 x 9 inch pan lined with heavy duty aluminum foil. Combine salt and pepper, and rub over surface of roast. Bake uncovered at 500 for 20 to 30 minutes. Turn oven off. Do not open door for 2 hours. Meat thermometer should register 145-medium rare, or 160 medium. Thinly slice meat, reserving pan juice. Serve meat with pan juices and horseradish sauce.

ROAST EYE OF ROUND WITH DIJON AND HORSERADISH

Eye of round is an extremely lean beef roast and should not be overcooked. For best results, slice very thinly. Serve with a side of steamed green beans and mashed potatoes and keep leftovers for sandwiches.

1 (4.0-pound) eye of round roast
1/2 cup prepared horseradish
1/4 cup Dijon mustard
1/2 cup chopped fresh flat-leaf parsley, divided
2 teaspoons coarse sea salt
1 teaspoon ground black pepper
1/2 cup light sour cream

Steps:

  • Preheat the oven to 450°F. Set beef roast on a rack in a large roasting pan.
  • In a small bowl, combine horseradish, mustard, half of parsley, salt and pepper.
  • Remove 1/4 cup horseradish mixture and whisk into sour cream in a small bowl to make a horseradish cream sauce for serving with the roast. Set aside in refrigerator.
  • Rub remaining horseradish mixture all over beef roast. Roast 25 minutes.
  • Reduce oven temperature to 325°F and continue roasting about 45 minutes or until roast has reached desired degree of doneness.
  • Note that the meat will continue cooking while it rests after being removed from the oven and the temperature will rise another 5 or 10 degrees. Let roast rest 15 minutes before slicing.
  • Garnish roast with remaining parsley.
  • Cut into very thin slices and serve with horseradish cream sauce.

1 (3-pound) boneless beef eye round roast
Salt and freshly ground black pepper
1/2 cup plus 2 tablespoons vegetable oil
5 cloves garlic
1 bunch parsley, leaves only
1/2 bunch fresh thyme, leaves only
8 sprigs fresh oregano, leaves only 2 sprigs fresh rosemary, leaves only
2 tablespoons mustard powder
Horseradish Cream, recipe follows
1/2 cup sour cream
2 tablespoons prepared horseradish
1 tablespoon lemon juice
Salt

Steps:

  • Special Equipment: food processor
  • Preheat oven to 350 degrees F.
  • Season roast well with salt and pepper. In a medium saute pan over medium-high heat, add 2 tablespoons oil. When hot, sear roast on all sides, until nicely caramelized, about 8 to 10 minutes. Remove roast to a sheet tray lined with a wire rack.
  • Meanwhile, place garlic, parsley, thyme, oregano, rosemary, mustard powder, 1/2 cup oil, salt and pepper, to taste, in a food processor and pulse until mixture forms a paste.
  • Rub paste all over roast. Bake in the oven until the roast is cooked to medium-rare or registers 125 degrees F on an instant-read thermometer, about 45 minutes.
  • Let roast rest 10 minutes before slicing and serve with Horseradish Cream.
  • Horseradish Cream:
  • In a small bowl, mix together all ingredients. Cover and refrigerate until ready to serve.
  • Yield: 1/2 cup

Steps:

  • Preheat the oven to 500 degrees F (260 degrees C). Season the roast with salt and pepper and place in a roasting pan or baking dish. Do not cover or add water.
  • Place the roast in the preheated oven. Reduce the temperature to 475 degrees F (245 degrees C). Roast for 21 minutes (seven minutes per pound) then turn off the oven and let the roast sit in the hot oven for 2 1/2 hours. Do not open the door at all during this time!
  • Remove the roast from the oven, the internal temperature should have reached at least 145 degrees F (65 degrees C). Carve into thin slices to serve.

1 boneless beef chuck roast (2 to 3 pounds)
1/2 teaspoon salt
1/2 teaspoon pepper
2 medium onions, thinly sliced into rings
1 jar (6 to 6-1/2 ounces) prepared horseradish
1/4 cup dry white wine or beef broth
1 tablespoon butter, melted
1 garlic clove, minced
1 tablespoon sugar
2 tablespoons all-purpose flour
2 tablespoons cold water
Hot cooked egg noodles
Minced fresh thyme, optional

  • Place roast in a 6-qt. slow cooker; sprinkle with salt and pepper. Top roast with onions. In a small bowl, combine next five ingredients; pour over roast and onions. Cook, covered, on low until meat is tender, 7-8 hours. , Remove roast; cool slightly and shred with two forks. Skim fat from cooking juices. 1/2 cup finely chopped fresh rosemary leaves
6 garlic cloves, minced
1 teaspoon finely grated lemon zest

1 top round beef roast (3 pounds), trimmed and tied
2 pounds small potatoes, halved or quartered if large
Horseradish Sauce

Steps:

  • Preheat oven to 400 degrees. In a small bowl, stir together 3 tablespoons oil, rosemary, garlic, and lemon zest; season with salt and pepper. In a large ovenproof skillet, heat 1 tablespoon oil over medium-high. Pat beef dry and add to skillet. Increase heat to high and cook, turning with tongs, until beef is browned on all sides, about 10 minutes.
  • Brush or spoon rosemary mixture over roast and place in oven. Roast 20 minutes. Remove from oven and place potatoes around roast, tossing in pan juices. Roast until potatoes are tender and beef is medium-rare (an instant-read thermometer inserted in thickest part of roast should read 120 degrees to 125 degrees), 30 to 35 minutes. Transfer roast to a cutting board, loosely tent with foil, and let rest 10 minutes. Toss potatoes with pan juices; tent with foil. Thinly slice meat against the grain and serve with potatoes and horseradish sauce.

2 teaspoons kosher salt
1 teaspoon black pepper
½ teaspoon dried thyme
4 cloves garlic, minced
1 (3 pound) beef eye of round roast
½ cup dry red wine (merlot or cabernet sauvignon)
½ cup beef broth
2 tablespoons cold butter, cubed

Steps:

  • Combine the oil, salt, pepper, thyme and garlic into a paste, then rub all over the roast. Set aside at room temperature for 1 hour. Forty minutes into the hour, pre-heat the oven to 500 degrees F.
  • On a baking sheet, place two sheets of Reynolds Wrap® Aluminum Foil large enough to cover the roast. Place the roast on the foil sheets and transfer everything to the oven. Roast for 6 minutes per pound.
  • Remove from the oven. Fold up the foil so it wraps the roast then return it to the oven. Reduce the oven temperature to 170 degrees F and roast for one hour. After an hour, check the internal temperature with an instant-read thermometer: 120-125 degrees F will yield a rare center, 130-140 degrees F will yield a medium-rare center, and 140-150 degrees F will yield a medium center.
  • When the roast is finished, remove it and set it on a cutting board to rest. Transfer any drippings from the roast into a saucepan, then combine with the red wine and beef broth. Bring to a simmer over med-high heat and reduce by 1/4; reduce heat to medium-low and whisk in the cubes of butter one at a time until incorporated into the sauce. Add salt and pepper to taste and set aside.
  • Slice the roast into 1/2 inch thick slices and serve with the pan sauce poured on top.
