ENGLISH MUFFIN TOASTS



English Muffin Toasts image

Yield Makes 4 to 5 dozen small toasts

6 English muffins, left unsplit
3/4 stick (6 tablespoons) unsalted butter, melted
Rounded 1/4 teaspoon salt

Steps:

  • Put oven rack in middle position and preheat oven to 375°F.
  • Cut muffins crosswise (not horizontally) into 1/3-inch-thick strips. Arrange muffin strips, cut sides down, in 1 layer on a large baking sheet, then brush strips evenly with all of butter. Bake, moving darker toasts to center and paler toasts to edges of sheet, until tops are pale golden, 10 to 15 minutes. Turn slices over and bake until toasts are golden on both sides, about 10 minutes more. Sprinkle buttered sides of toasts with salt, then serve warm or at room temperature.

SPICED ENGLISH MUFFIN TOASTS

8 English muffins (non split), cut in 1/4-inch slices
3/4 stick (6 tablespoons) unsalted butter, melted
3/4 teaspoons aniseed, ground in a spice grinder
2 teaspoons cinnamon
1/2 teaspoon ground allspice
2 tablespoons sugar
1/8 teaspoon salt

Steps:

  • Brush a large baking sheet with some of the butter, arrange the muffin slices in one layer, touching, on the sheet, and brush them with the remaining butter. Bake the muffin slices in the upper third of a preheated 375°F. oven for 15 to 20 minutes, or until they are pale golden. In a small bowl combine well the aniseed, the cinnamon, the allspice, the sugar, and the salt, sprinkle the mixture over the toasts, and bake the toasts for 4 minutes more, or until they are crisp and golden brown.
