This is a beautiful and elegant chili made with black lentils known as the caviar of lentil's. I'm a southern girl so I had to add some Virginia Country Ham for that down home taste. 2 c black lentils, dry
1 lb country ham, soaked & diced
14 oz half cooked duck deboned & chopped
28 oz white hominy, drained
15 oz diced tomatoes
1/2 c colorful bell peppers, chopped
1/2 can(s) chipotle in adobo sauce, chopped (more or less)
11 1/2 oz tomato & chili cocktail (or tomato juice)
1/2 bunch cilantro stems chopped
2 can(s) green chiles, diced
1 large onion, chopped
3-4 Tbsp roasted garlic, chopped
1 1/2 Tbsp cumin
2 Tbsp chili powder
1 Tbsp oregano, dried
1 c champagne, dry
6 c water
salt & pepper to taste
GARNISHES
2 medium avocado chopped
1 small red onion, chopped
2 medium roma tomato, chopped
1/2 bunch cilantro, chopped
6-8 oz sour cream
4-6 oz queso blanco, crumbled
tortilla chips

Steps:

  • 1. get ingredients ready
  • 2. add diced country ham, duck bones, cilantro chopped stems, onions, garlic & 1 1/2 cups of water to a large stock pot. bring to a simmer. cook ham for 30 minutes or until tender
  • 3. remove the duck bones from the pot and throw away. add lentils, duck meat and oregano to pot. simmer for 20 minutes. stir frequently
  • 4. add remaining ingredients. bring to a boil, reduce heat to medium-low and simmer for 20-30 minutes, until lentils are tender
  • 5. garnish and serve
