OATMEAL PEANUT BUTTER ENERGY BARS



Oatmeal Peanut Butter Energy Bars image

Cooking spray
1/2 cup honey
1/2 cup natural creamy peanut butter
2 tablespoons maple syrup
1 tablespoon canola oil
1/4 cup light brown sugar
1/4 teaspoon ground cinnamon
1 teaspoon vanilla extract
2 cups rolled oats
2 cups crisp brown rice cereal
1/4 cup toasted wheat germ
1/2 cup chopped roasted peanuts
1/2 cup chopped dried apricots
1/2 cup chopped dried figs
1/2 teaspoon kosher salt

Steps:

  • Spray a 9 by 13-inch baking dish with cooking spray and set aside.
  • In a small saucepan over medium heat, combine honey, peanut butter, maple syrup, canola oil, brown sugar, cinnamon. Stir and cook until mixture just begins to bubble, about 3 to 5 minutes. Remove from heat and stir in vanilla extract.
  • In a large bowl, combine oats, rice cereal, wheat germ, peanuts, apricots, figs and salt.
  • Pour peanut butter mixture over oatmeal mixture and stir gently with a spatula until well combined. Transfer to baking dish, cover with parchment paper and press firmly into dish. Allow to cool completely (will cool faster in the refrigerator). Cut into squares or bars.

1 ⅓ cups rolled oats
½ cup all-purpose flour
½ cup vegan semi-sweet chocolate chips
½ cup ground unsalted cashews
2 tablespoons shelled unsalted sunflower seeds
1 tablespoon ground flax meal
1 tablespoon wheat germ
½ teaspoon ground cinnamon
¼ teaspoon sea salt
½ cup honey, warmed
⅓ cup almond butter
½ teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a 9x11-inch baking dish with aluminum foil.
  • Whisk oats, flour, chocolate chips, ground cashews, sunflower seeds, flax meal, wheat germ, cinnamon, and sea salt together in a large shallow bowl.
  • Stir warmed honey, almond butter, and vanilla extract together in a bowl until well-mixed. Pour honey mixture into oat mixture; stir until batter is well-combined. Turn batter out into prepared baking dish. Lay a sheet of waxed paper over batter and press firmly to evenly distribute in the baking dish. Remove and discard waxed paper.
  • Bake in the preheated oven until golden and fragrant, about 12 minutes. Pull aluminum foil from baking dish and cool bars in the aluminum foil for 10 minutes; remove and discard aluminum foil. Cut into bars.

2 cups oats
2 cups coconut flakes
1 cup peanut butter
1 cup semisweet chocolate chips
1 cup flax seeds
2 teaspoons vanilla extract

Steps:

  • Mix oats, coconut, peanut butter, chocolate chips, flax seeds, and vanilla extract together in bowl until well combined. Press mixture into the bottom of a 9x9-inch baking dish and cut into desired number of bars, leaving bars in the baking dish. Refrigerate for 1 hour.

1/4 cup chilled butter, cut into small pieces
2/3 cup packed brown sugar
3 cups oats
1 cup raisins
1/2 cup dried cranberries
1/2 cup chopped dried apricot
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 large egg whites, lightly beaten
1/2 cup chunky peanut butter
1/2 cup fat-free sweetened condensed milk

Steps:

  • Preheat oven to 350°F.
  • Cut butter into brown sugar with a pastry blender until crumbly.
  • Stir in oats and next 5 ingredients.
  • Combine egg whites, peanut butter and condensed milk in a small bowl; stir with a whisk until smooth.
  • Add egg mixture to oats, and stir well.
  • Press mixture into a jelly-roll pan coated with cooking spray.
  • Bake at 350F for 20 minutes; cool completely.

Banana energy oatmeal bars are made with just 5-ingredients and make a delicious, vegan breakfast or snack when you need something quick and easy!

3 large ripe bananas, (14-16 ounces)
2 cups rolled oats, (gluten free)
1 cup creamy peanut butter, (all natural)
1 cup chopped walnuts
1/2 cup chocolate chip*
1 teaspoon vanilla extract
1 teaspoon cinnamon

Steps:

  • Pre-heat oven to 350 F and grease a quarter sheet pan with cooking spray or coconut oil.
  • Place bananas in a large bowl and mash with the back of a fork until they are broken down.
  • Add oats, peanut butter, chopped walnuts, chocolate chips, vanilla and cinnamon.
  • Stir everything together until all of the ingredients are well combined and you have a nice thick batter.
  • Transfer the batter onto the prepared baking sheet and pat done until it's pushed into the corners, along the sides and even on top.
  • Bake for 25-30 minutes or until they are fragrant, lightly browned on top and set through.
  • Cool completely. Slice into 16 bars by making one vertical slice and seven horizontal. Enjoy!
