TURKEY AND SPINACH LASAGNA
Steps:
- Preheat oven to 350 degrees F.
- In a large pot, bring several quarts of salted water to a boil. Add noodles and cook until very al dente, 7 minutes. Remove from water and place on a towel lined baking sheet.
- Place the olive oil, onion and red pepper in a large saute pan over medium-high heat. Saute until the vegetables begin to sweat, about 5 minutes. Add ground turkey, turkey sausage, garlic and Essence, stirring to combine until turkey cooks through, about 10 minutes. Add marinara sauce; bring to a boil. Reduce heat, and simmer 10 minutes. Remove from heat.
- In a large bowl, combine 1 1/2 cups mozzarella and remaining ingredients and set aside.
- Spray a 13- by 9-inch baking dish with cooking spray. Spread 1 cup turkey mixture in bottom of the dish and arrange 4 noodles over turkey mixture; top with 1 1/2 cups turkey mixture. Spread half of cheese mixture over turkey mixture. Repeat layers, ending with the remaining turkey mixture.
- Cover and bake for 45 minutes. Sprinkle with remaining 1 1/2 cups mozzarella cheese, and bake, uncovered, for 20 minutes.
- Let lasagna stand 10 to 15 minutes before serving.
- Combine all ingredients thoroughly.

- in a large non-reactive container (a cooler you don't use anymore is good) combine juices, salt, sugar and enough water to dissolve salt and sugar (about 1 gallon). add rest of ingredients, except more water and stir together. put the turkey in in the brine, the entire turkey needs to be covered, add more water to cover completely, cover and refridgerate overnight, at least 12 hours. if a container is not available, place turkey in a large heavy duty plastic bag, pour in brine and water as needed, set in a large pan or other container to catch any leakage. remove turkey from brine (discard brine)...pat turkey dry with paper towles. prepare and roast turkey as you usually would.

- Preheat the oven to 350 degrees F.
- In a mixing bowl, combine the ricotta, Provolone, Mozzarella, Romano, egg, milk, basil and garlic. Mix well. Season with salt and pepper. To assemble, spread 2 1/2 cups of the meat sauce on the bottom of a deep dish lasagna pan. Sprinkle 1/4 of the grated cheese over the sauce. Cover the cheese with 1/4 of the dried noodles. Spread a 1/4 of the cheese filling evenly over the noodles. Repeat the above process with the remaining ingredients, toping the lasagna with the remaining sauce. Place in the oven and bake until bubbly and golden, about 45 minutes to 1 hour. Remove from the oven and cool for 10 minutes before serving. Slice and serve.
- In a large nonreactive saucepan, over medium heat, add the oil. In a mixing bowl, combine the meat. Season with salt and pepper and mix well. When the oil is hot, add the meat and brown for 4 to 6 minutes. Add the onions, celery, and carrots. Season with salt and pepper. Cook for 4 to 5 minutes or until the vegetables are soft. Add the garlic and tomatoes. Season with salt and pepper. Continue to cook for 2 to 3 minutes. Whisk the tomato paste with the stock and add to the tomatoes. Add the thyme, bay leaves, oregano, basil and red pepper. Mix well. Bring the liquid to a boil, reduce the heat to medium and simmer for about 2 hours. Stir occasionally and add more liquid if needed. During the last 30 minutes or cooking, reseason with salt and pepper and stir in the cheese. Remove from the heat and let sit for 15 minutes before serving.

- preheat oven to 400 Heat the olive oil add the onion and cook for 5 min over med. low heat, until translucent. Add the garlic and cook for 1 min more. Add the sausage and cook breaking it up for 10 min, or till no longerpink. Add tomatoes, pasted, 2 Tbl parsley, the basil, 1 tsp salt, 1/2 tsp pepper. Simmer uncovered, 15-20 min or until thickened. In a med. bowl, combine ricotta, goat cheese, 1 cup parmesan, egg, and remaining parsley. Ladle 13 sauce into pan then add layers as follows, pasta, mozzarella, ricotta, sauce. End with sauce, sprinke with parmesan. Bake 30 min, until bubbling.
