This is my favorite fruit pie of all. Wish I could find the berries in our area. Tapioca can be used in place of cornstarch if desired.

1 recipe pastry for a 9 inch double crust pie
4 cups elderberries
1 cup white sugar
3 tablespoons cornstarch
1 tablespoon lemon juice

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Mix cornstarch in a little bit of water and add to berries and sugar. Cook, stirring constantly until desired thickness. Add more cornstarch if not thick enough. Add lemon juice.
  • Pour into bottom crust. Dot with butter. Put on top crust or make a lattice.
  • Bake at 375 degrees F (190 degrees C) until browned and berries are bubbling through holes in the crust, approximately 40 minutes.
  • Note: It is a good idea to put a pan or foil under the pie as it bakes since it might bubble over.

This is my father's recipe. After many years, I finally got him to write it down. I go out in the fields about August 1st (in my area) and harvest some wild elderberries to make this delicious pie. My Grandson toke the top prize at the FFA Pie aution in 2006 with this pie.

4 cups elderberries
1 1/4 cups sugar
6 tablespoons flour
2 tablespoons lemon juice
1/2 teaspoon cinnamon
2 tablespoons butter
pastry for a double-crust 9-inch pie

Steps:

  • Combine berries, sugar, flour, and lemon juice in a medium sauce pan.
  • Heat mixture until it just starts to boil, stirring occassionaly.
  • Remove from heat and let cool for 15 minutes.
  • Preheat oven to 425 degrees Fahrenheit.
  • Spread bottom crust in a 9 inch pie pan.
  • Spread berry mixture in pie shell.
  • Sprinkle cinnamon on top.
  • Dot butter on top.
  • Put top crust on and seal edges.
  • Poke several vent holes in top crust.
  • Bake at 425 degrees Fahrenheit for 10 minutes. Turn oven down to 350 degrees Fahrenheit, leaving pie in oven, and bake for 30 minutes longer.

I remembered my mom and grandmother making pies of all sorts in the summer and fall seasons. Elderberry pies were one of grannie's favorite pies as well. So here is the simple recipe...

2 (9 inch) deep-dish prepared pie crusts
4 cups fresh elderberries, stemmed
1 cup water
1 cup white sugar
3 tablespoons water
3 tablespoons cornstarch
1 tablespoon orange juice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Unroll 1 crust and press firmly against the side and bottom of an ungreased 9-inch pie plate. Prick bottom and sides with a fork.
  • Bake in the preheated oven until light brown, 10 to 12 minutes. Let cool.
  • Combine elderberries, 1 cup water, and sugar in a saucepan over medium heat. Whisk 3 tablespoons water and cornstarch together in a bowl; pour into the saucepan. Cook and stir until filling thickens and coats the back of a wooden spoon, 5 to 10 minutes. Remove from heat; stir in orange juice.
  • Pour filling into the cooled pie crust. Lay second crust on top. Press edges together to seal with a fork. Cut slits in the top crust with a knife for steam to escape.
  • Bake in the preheated oven until crust is browned and filling is bubbly, about 40 minutes. Cool completely before slicing, about 1 hour.

1 (15 ounce) package pastry for a 9-inch double-crust pie
2 cups sour cream
2 cups white sugar
2 cups fresh elderberries, stemmed
¼ cup all-purpose flour
¼ teaspoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Roll 1 crust into a 12-inch circle; place in a 9-inch pie plate.
  • Mix sour cream, sugar, elderberries, flour, and salt together in a bowl. Spoon filling into the crust in the pie plate.
  • Roll second crust into a 10-inch circle; cut a few slits in the center to vent steam. Place crust over the filling. Press crusts together to seal; flute edges.

My husband loves elderberry pie and every year he haunts the fields around our home for some of these luscious berries for his favorite pie. I do substitute splenda for sugar in this recipe.

3 c elderberries
1 1/2 can(s) sugar
5 Tbsp flour
1/2 tsp cinnamon
3 Tbsp lemon
2 Tbsp butter
1/2 tsp salt

Steps:

  • 1. Make pie dough for double crust. jRemove stems from berries. Mis sugar, flour, salt and cinnamon, carefully blending with berries. Do not crush berries. Pour into pie crust. Pour lemon juice over berries. Put dots of butter on top and add top crust. Bake at 450 for 10 minutes then at 350 for 40 minutes.

3 cups elderberries
1 ½ cups sour cream
1 ½ cups white sugar
½ cup all-purpose flour

1 recipe pastry for a 9 inch double crust pie
½ cup packed light brown sugar
1 teaspoon ground cinnamon
3 cups elderberries
¼ cup seedless grapes
1 tablespoon cider vinegar
2 tablespoons unsalted butter
2 tablespoons all-purpose flour

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C).
  • Combine the flour, sugar, and cinnamon; reserve 1/4 of this mixture. Add the remaining 3/4 flour mixture to the elderberries and grapes, and mix thoroughly. Sprinkle the reserved flour mixture evenly over the bottom of the crust in pie plate. Turn the filling into the crust, and dot with butter.
  • Sprinkle the vinegar over the pie filling, and top with remaining crust.
  • Bake for 10 minutes. Reduce the heat to 350 degrees F (175 degrees C). Bake for 35 to 40 minutes, or until golden brown.

  • Preheat oven to 425 degrees F (220 degrees C). Line a 9 inch pie pan with pastry.
  • Combine berries and lemon juice. Pour into shell. Mix sugar, salt and flour. Sprinkle over berries.
  • Cover with top crust. Seal and flute edges. Cut a few small steam vents in the top.

This is the perfect autumnal pie for a family dessert. Serve with a dollop of fresh cream or vanilla ice cream for an indulgent slice of the season

20 sprigs of elderberries
200g golden caster sugar or less, depending on your preference for sweetness
plain flour , for dusting
butter , for greasing
250g shortcrust pastry , defrosted if frozen
200g ground almonds
crème fraîche , yogurt, or ice cream to serve

Steps:

  • Make a syrup by first washing the berries well and stripping them from their stalks. Tip them into a pan with 2 tbsp water and half the sugar. Simmer for 10 minutes and add more sugar if you think you need it. After 10-15 mins the syrup will have thickened, at which point let it cool and strain through a fine sieve to get rid of any pips. Set aside.
  • Heat oven to 180C/160C fan/gas 4. Roll the pastry out on a lightly floured surface and cut into two circles - one large enough to line the base of a 20cm pie dish and the other for the lid. Grease the tin with the butter and line the base with the larger round of pastry. Scatter over the ground almonds, then pour the elderberry syrup on top. Brush the edges of the pastry with water and drape over the lid and press or crimp the edges together and make a hole in the top. Brush the top with water and sprinkle with the remaining sugar. Bake for 40-45mins until the pastry is crisp and golden. Leave to cool a little then enjoy warm cut into slices with crème fraîche, yoghurt, or ice cream. White sugar - 2 1/3 cup
Brown sugar - 1 Cup
4 tbsp of this mix : lemonjuice - red wine vinegar - coffee liquor - equal parts
1/2 tsp salt
1/4 tsp cinammon
1/2 tsp nutmeg
1/8 tsppinch of natural unsweetened cocao
3/4 c instant tapioca

  • Let sit overnight in refrigerator Remove from refrigerator, add 1 tbsp butter in small bits Let stand for 30 minutes. Preheat oven to 400º Line 2 9" pie plates with crust Divide the elderberry mix equally into the 2 shells Cover top with lattice crust or create your own design. Have fun. Bake at 400º for ten minutes. Reduce heat to 350º, bake 30-40 minutes longer. Cool thoroughly on rack, then in refrigerator.

Enough pastry for six little pies
One bowl of strawberries
A little bit of butter
Some Sugar
Elderberry jam
Some cereals or biscuits
An egg

Steps:

  • Preheat the oven at 200°C to start off. Then, take the biscuits or cornflakes and make crumbs out of them. Put them on the side in a bowl. Cut the strawberries and also put them in a bowl on the side. Butter the six little pans, and gently put the pastry in it while folding what exceeds to thicken the edges. Put on or two spoons of the crumbs at the bottom of each little pie (it will absorb the water that will come out of the strawberries once you've put the pies in the oven) and cover them with elderberry jam (one or two coffee spoons will be enough). Generously stuff the pie with strawberries, and put what's left of the crumbs on top. You can put a little bit of sugar (or honey). With what's left of the pastry, you can decorate your pies. And then, you can take a brush and put some egg so that they won't burn in the oven. Put them in the oven at 200°C. After 15 minutes, turn down the oven to 150°C and leave them in for 15 more minutes. Take them out, and let them cool down for a bit, before eating them with sorbets and whipped cream. They are even better when they are still a little bit warm !
