GREEN TOMATO SOUP WITH COUNTRY HAM



Green Tomato Soup With Country Ham image

A fabulous soup to use up those tomatoes. Freezes well. Serve with fresh cornbread as the perfect compliment to this flavorful soup.

2 tablespoons butter
6 ounces country ham or 6 ounces smoked ham, diced
1 small onion, diced
2 garlic cloves, minced
4 cups chicken broth
8 medium green tomatoes, peeled and chopped
2 medium tomatoes, peeled and chopped
1 jalapeno pepper, seeds and stem removed, minced
1/4 teaspoon celery salt
1 dash Tabasco sauce (optional)
salt and pepper, to taste

Steps:

  • Heat butter in a medium saucepan over medium-low heat; add ham, onion, and garlic. Sauté, stirring, until onion is tender. Add chicken broth, chopped green and red tomatoes, and minced jalapeno pepper. Bring to a boil; reduce heat and simmer for about 30 minutes.
  • Working in batches, pulse in a blender or food processor until almost smooth. Pour back into the saucepan and add celery salt. Bring to a boil, reduce heat, and simmer, uncovered, for 5 minutes. Taste and add salt and pepper and Tabasco sauce, as desired.

The browned potatoes pick up the tasty flavor of the ham. I love making this for a comforting meal. Recipe is from Taste of Home's "The Best of Country Cooking," Second Edition.

2 -3 tablespoons butter or 2 -3 tablespoons margarine
2 lbs sliced cooked ham, about 1/2 inch thick
1 1/2 lbs potatoes, peeled, quartered and cooked
snipped fresh parsley

Steps:

  • In a large heavy skillet, melt butter over medium-high heat.
  • Brown ham on both sides.
  • Move ham to one side of the skillet; brown potatoes in the drippings.
  • Sprinkle potatoes with parsley.
  • Note: Prior to adding to skillet, only boil potatoes till just tender or they will have a tendency to fall apart while browning in the skillet.

How to Cook a Country Ham image

For those of you that don't know, a country ham is cured with salt. it needs no refrigeration until after all the cooking is done, but you have to cook it a certain way or the whole ham will be ruined. It takes a little time, but it's sure worth it. There is nothing like a country ham. I like to slice it and eat it on biscuits. PLEASE FOLLOW THE DIRECTIONS TO THE TEE--THE SALT MUST BE EXTRATED FROM THE MEAT OR IT WILL TASTE HORRIBLE.

1 (15 lb) smoked country ham
2 tablespoons ground cloves
2/3 cup light brown sugar
cider vinegar

Steps:

  • Scrub ham thoroughly with a stiff brush.
  • Place ham in large pot or pan--even a cooler will work. Cover it completely with water and allow to soak for 24 hours, (discard water).
  • Preheat oven to 325°F.
  • Put ham in large roaster fat side up and again cover completely with water. place in oven on lowest shelf and bake for 2 hours. Turn ham to other side and cook another 2 hours. It takes 4 to 41/2 hours in all or 15 to 18 minutes per pound for a good tender ham.
  • Remove ham from oven, but leave in water overnight (do NOT refrigerate).
  • The next day preheat oven to 425°F.
  • Remove and discard ham skin. Sprinkle fat with ground cloves.
  • Combine sugar with enough vinegar to make a paste and brush on ham. Bake for 20 to 30 minutes; let rest for 1 hour out of the oven, then slice and serve.

Spanish Tomato Bread With Jamón Serrano image

These tasty tapas snacks are ready in just 5 minutes, the perfect accompaniment for a drinks, tapas or summer cocktail party. Jamón serrano is a Spanish ham & similar to prosciutto - which you could use instead. Try to use sun ripened (not cold frame) tomatoes - they really make a huge difference to this recipe! This recipe serves 10 to 12 people, with other accompaniments on offer.

4 ripe tomatoes, chopped
1 -2 garlic clove, finely chopped
3 tablespoons olive oil
salt
pepper
20 -24 slices baguette
5 -6 slices serrano ham
chopped fresh basil or flat leaf parsley, to serve

Steps:

  • Mix together the chopped tomatoes, garlic clove/s, olive oil, salt and pepper.
  • Keep the mixture in the fridge until needed.
  • To serve, toast the slices of baguette. Spoon a little tomato topping on to each piece of toast.
  • Tear the slices of jamón serrano into pieces and put one piece on each slice of bread.
  • Arrange on a large attractive plate, sprinkle with chopped basil or flat leaf parsley and eat!
