I first had this dish at a baby shower brunch about 20 years ago. It's as good today as it was back then. You may assemble it the night before and bake in the morning. Also yummy when the family wants "breakfast for dinner."

1 lb country sausage (hot)
6 large eggs, slightly beaten
2 cups milk
1 teaspoon salt
1 teaspoon dry mustard
2 slices stale bread, torn into small pieces
1 cup cheddar cheese, grated
3 tablespoons onions, chopped

Steps:

  • Brown sausage in skillet. Drain.
  • Spread sausage in bottom of 11 X 7 X 2" baking dish.
  • Combine remaining ingredients and pour over sausage.
  • Bake at 350 F for 45 minutes.

12 eggs
3/4 cup half-and-half
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 cup shredded Cheddar cheese (4 oz)
1 cup shredded Colby cheese (4 oz)
1/2 cup chopped green onions
1 bag (20 oz) refrigerated cooked shredded hash brown potatoes
1 lb bulk pork sausage, cooked, drained
1/2 cup chopped roasted red peppers or chopped red bell pepper

Steps:

  • Line sides of 4- to 5-quart slow cooker with foil that has been folded into thirds; spray with cooking spray. (See tip.)
  • In medium bowl, beat eggs, half-and-half, pepper flakes, salt and pepper with whisk. Reserve 3/4 cup Cheddar cheese and 2 tablespoons green onions; set aside. In small bowl, stir together remaining cheeses.
  • Layer half of the potatoes, sausage, roasted peppers, remaining green onions and cheese in slow cooker. Repeat layers. Pour egg mixture over layers.
  • Cover; cook on Low heat setting 4 to 5 hours or on High heat setting 2 1/2 to 3 hours or until temperature reaches 160°F in center and egg mixture is set.
  • Sprinkle reserved cheese and green onions over top of casserole. Cover; cook 10 minutes longer or until cheese is melted. Remove foil before serving by loosening edges with table knife.

1 lb mild ground sausage
15 ounces frozen hash browns (half a package)
1/2-1 cup of shredded colby cheese
6 eggs
2 cups milk
1/4 teaspoon ground dry mustard
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Brown the sausage.
  • Lightly grease 8x8 glass pan.
  • Mix the sausage, hashbrowns, cheese in 8x8 pan.
  • In a large bowl mix the eggs, milk, dry mustard, salt and pepper.
  • Poor egg mixture into 8x8 pan.
  • Cover with tin foil.
  • Refigerate for 8 hours or overnight.
  • Preheat the oven at 375.
  • Bake at 375 for 35 minutes.
  • Remove tin foil.
  • Bake for another 35-45 minutes until the middle is cooked through and isn't runny when jiggled.

1 small green bell pepper, seeded and finely chopped

1 lb Italian pork sausage (then cooked, drained, crumbled)
4 1/2 cups cubed day old bread
2 cups shredded sharp cheddar cheese
10 eggs, slightly beaten
4 cups whole milk
1 teaspoon dry mustard
1 teaspoon salt
1/4 teaspoon onion powder
fresh ground pepper
1/2 cup sliced mushrooms (optional)
1/2 Rotel tomatoes & chilies (optional)

Steps:

  • 1 Heat a skillet on medium high. Break up the sausage into chunks and cook, working in batches if need be, until browned all around. Make sure the chunks of sausage have some space around them or your meat will steam and not brown. Remove the cooked sausage from the pan and let sit on some paper towels on a plate to soak up the excess fat. Crumble into smaller pieces.
  • 2 Place bread in a well buttered 9x13 inch baking pan. Sprinkle with cheese. Combine the eggs, milk, dry mustard, onion powder and pepper. Pour evenly over the bread and cheese. Sprinkle sausage and optional ingredients over the top.
  • 3 At this stage you can cover and chill overnight, if you want to prepare ahead. If not, let sit for 10 minutes before putting in the oven. Preheat oven to 325 degrees F. Bake uncovered for about one hour. Tent with foil if top begins to brown too quickly.

8 oz sharp cheddar cheese, shredded
2 1/2 c milk, divided
6 eggs, beaten
1/4 tsp dry mustard
1/2 tsp marjoram, dried
1/2 tsp basil, dried
1 can(s) cream of mushroom soup, undiluted

Steps:

  • 1. Brown sausage, drain and set aside.
  • 2. Place bread in a greased 9" x 13" baking dish and top with cheese and sausage.
  • 3. Combine 2 cups milk, eggs, dry mustard, marjoram and basil.
  • 4. Pour over sausage, cover and chill 8 hours or overnight.
  • 5. Mix soup with 1/2 cup milk and pour over casserole.

This is a really good egg casserole, it's simple, easy and taste great. I found this recipe in the "Country Inn and Bed & Breakfast Cookbook".

1 lb sausage
6 eggs
2 cups milk
1 teaspoon salt
1 teaspoon dry mustard
2 slices bread, cubed
1 cup grated cheddar cheese (or any combination of your favorite cheeses)

Steps:

  • Brown sausage and drain.
  • Beat the eggs with milk, salt, and mustard.
  • Layer bread cubes in the bottom of a buttered 9 by 13-inch casserole dish.
  • Crumble the sausage over the bread and top with cheese.
  • Pour the egg mixture over all.
  • Refrigerate overnight.
  • Bake in 350 degree oven for 30-40 minutes.
  • When using a glass casserole, bake in 325 degree oven for 45-60 minutes.
  • Note: it could just be my oven, but when i bake this, it takes about 90 minutes in a glass casserole dish, and i need to cover casserole with foil for the last 30 of those minutes; so it doesn't burn.
  • This is really good with a little bit of maple syrup on top.
