3 cloves garlic
Salt
1 cup mayonnaise
2 1/2 teaspoons freshly squeezed lemon juice

Steps:

  • Gather the ingredients.
  • Crush the garlic cloves with the flat of a knife, and remove the skin. Then mince the garlic very finely.
  • Add a pinch of salt, and using the flat of the knife again, scrape and press the garlic against the cutting surface to make a paste that is as smooth as possible. It's making this paste from the fresh garlic that gives aioli its intense garlic flavor. Note that making a smooth paste is key to the success of this sauce. If you don't spend a few minutes on this step, you will be left with small bits of raw and harsh-tasting garlic, which will not do justice to the magic of aioli.
  • Add the garlic to a small bowl, and whisk together with mayonnaise, lemon juice, and 1/4 teaspoon salt. Wrap and refrigerate for 30 minutes to allow the flavors to develop.

From the original Eating Well magazine. This recipe is from 1990. I wanted to post it here so I don't lose it. This sauce is thick and creamy and marvelous on vegetables or meats. It also makes a tasty sandwich spread. Cook time is actually processing in a blender.

1/2 cup eating well's sweet garlic paste
1 cup olive oil
salt and pepper
lemon juice (optional)

Steps:

  • Place garlic puree in a blender. With the motor running, gradually drizzle in the oil in a very fine stream.
  • When the mixture is fully combined, add salt and pepper to taste.
  • Add lemon juice and/or Dijon mustard to taste, depending on what you plan to use the sauce for.
  • Keeps in the refrigerator for a week.

¼ cup extra-virgin olive oil, divided
½ cup reduced-fat buttermilk
2 ½ teaspoons Dijon mustard
1 ½ teaspoons honey
1 teaspoon grated lemon zest
2 tablespoons lemon juice
½ teaspoon onion powder
¼ teaspoon salt

Steps:

  • Preheat oven to 400°F. Trim and discard top 1/2 inch from garlic head. Place the garlic, cut-side up, on a sheet of foil; drizzle with 1 tablespoon oil. Wrap tightly in the foil; roast until the cloves are completely softened and jammy, about 40 minutes. Let cool for 15 minutes. Squeeze the garlic cloves onto a cutting board; discard garlic skins. Using the flat side of a chef's knife, mash the garlic into a paste.
  • Transfer the garlic paste to a lidded jar or medium bowl. Add buttermilk, mustard, honey, lemon zest, lemon juice, onion powder, salt and the remaining 3 tablespoons oil. Seal the jar and shake, or whisk vigorously in the bowl, until well combined. Shake or whisk before serving.

3 heads garlic (about 6 ounces total)
1 cup eating well's rich chicken broth

Steps:

  • Separate and peel the cloves of garlic from all three heads. Smash the peeled cloves to lightly crush.
  • Add smashed garlic to the stock in a medium saucepan. Cover and bring to a boil over medium heat. Reduce heat to low and simmer, covered for 25 minutes.
  • Transfer garlic and stock to a blender or food processor and process until smooth.
  • Store tightly covered. Keeps in the refrigerator for 2 days. Freezes for up to 6 months.

2 egg yolks, preferably free range
175ml rapeseed, sunflower oil or half sunflower, half olive oil
1-3 garlic cloves crushed (depending on how strong you want it)
¼ tsp Dijon mustard (optional)
½ tsp white wine vinegar (optional)

Steps:

  • Put the egg yolks in a mixing bowl and lightly whisk, then add the oil, a short drizzle at a time while continuing to whisk. This technique is important because the oil and egg will otherwise not emulsify. Mix in the garlic, mustard and vinegar, if using, and ¼ tsp salt. Taste and adjust the seasoning if needed. Will keep chilled in a jar for up to three days.

2 cloves garlic, chopped
1 Tbsp dijon mustard
1 Tbsp lemon juice
¾ tsp salt
2 egg yolks
¾ cup canola oil

Steps:

  • Place the garlic, mustard, lemon juice, salt and egg yolks in a blender. Blend on low, then slowly drizzle in the oil in a thin line to emulsify. Be careful not to add to much at once, as this will break the emulsion. Loosen with 1 tablespoon of water to reach the desired consistency. This mayo can be kept for up to 1 week in a resealable plastic container or squeeze bottle.
