EASY FRIED SHRIMP AND TARTAR SAUCE

- Pour the oil into a heavy-bottomed pot fitted with a deep-frying thermometer. Heat over medium-high heat to 375 degrees F. Line a baking sheet with paper towels and top with a cooling rack.
- In a medium mixing bowl, whisk together the rice flour and beer until a smooth batter is formed. Season with 1/2 teaspoon salt and pepper.
- Lightly salt the shrimp. Holding the tails, dip the shrimp into the batter to evenly coat on both sides.
- One by one, gently drop the battered shrimp into the hot oil. Fry, flipping once if necessary, until golden brown on both sides, 1 to 2 minutes. While frying the shrimp, be sure to monitor the temperature of the oil and maintain it at 375 degrees F. Transfer the fried shrimp to the cooling rack and sprinkle generously with salt.
- Serve the fried shrimp with Tartar Sauce for dipping.
- Mix the mayonnaise, dill, cornichons, vinegar, capers, mustard and some salt and pepper in a small bowl. Refrigerate until serving.
EASY TARTAR SAUCE
I've tried a ton of recipes for tartar sauce, and this by far, is the best. It's easy to make but it's absolutely fantastic! The measurements don't have to be exact for this to work, so play with your food!

My Mom always made tartar sauce this way. I like it much better than the bottled kind. I've tried plenty of fancy recipes, but I always come back to this one. Sometimes the most simple recipes are the best.

OVEN-BAKED FISH STICKS WITH EASY TARTAR SAUCE (KID-FRIENDLY)
Although cod is stated in the ingredients this recipe will work good using tilapia or white fish fillets. This will serve about 3 people, but can be easily doubled. The already crushed cornflake crumbs that you purchase in a small box will not work as well for this recipe, the texture is too fine and the fish sticks will not be as crispy, try to use regular cornflakes cereal and grind them in your processor. You can double the tartar sauce recipe if you prefer more sauce, try to make the sauce even up to a day ahead to blend flavors. This is a great recipe for kids of all ages LOL!

- Set oven to 475°F (set oven rack to second-lowest position, or the middle rack).
- In a bowl mix together the mayo, sweet relish, garlic powder and lemon juice; whisk to blend, and season with salt and pepper, cover and refrigerate until ready to use.
- Process the cornflakes with a pinch of seasoning salt and black pepper on a processor until coarse crumbs form (leave the crumbs coarse, don't grind them to a fine texture) transfer the crumbs to a bowl and mix in lemon peel.
- In a small bowl mix together the melted butter with about 2-3 tablespoon fresh lemon juice until well combined.
- Season the fish with black pepper (and more salt if desired) then brush the fish with the lemon butter to coat on all sides.
- Dip the fish into the cornflake mixture coating completely.
- Arrange the fish on a lightly greased baking sheet.
- Sprinkle with any remaining cornflake mixture.
- Bake fish for about 7-10 minutes (depending on the size of the fish strips).
- Serve with the sauce.

- For the tartar sauce; in a bowl blend all ingredients until well combined.
- Cover and refrigerate a minimum of 2 hours before using.
- For the fish; place eggs in a shallow bowl.
- In another shallow bowl mix together the crushed saltines with garlic powder and lemon pepper (or black pepper) until very well combined.
- Coat the fish fillets firstly in the eggs, then coat into the breading mixture.
- Place fillets on a plate and let stand for about 5-8 minutes.
- Heat oil in a large skillet over medium-high heat.
- Add in fillets and fry about 2-3 minutes on each side or until the fish flakes (cooking time will vary depending on the thickness of your fish).
- Remove to a plate then lightly sprinkle with seasoned salt.
- Serve fish with tartar sauce, YUMMMMM!

QUICK EASY AND DELISH DILL TARTAR SAUCE
If you are a fan of pickles, then you're going to love this easy tartar sauce. It has a wonderful dill flavor throughout with bits of fresh cucumber in every bite. Pepper gives it a nice little kick of spice. We tried this with shrimp and it was delicious. We can't try dipping other things into the tartar sauce.

TASTY AND SUPER EASY TARTAR SAUCE
This is a great tartar sauce to go with fish, seafood, sandwiches or even on baked potatoes. I got the inspiration for it from "The Essential Seafood Cookbook" by Murdoch Books, but I tweaked it a fair bit too! I prefer to use my Recipe #207860, but most whole egg mayos will do the job. You can vary the amounts depending on taste, but it's very hard to mess it up, even when you forget an ingredient or two, as I often do!

- Mix cornmeal, flour, bread crumbs, and your seasoning thoroughly in a bowl for breading.

KITTENCAL'S EASY TARTAR SAUCE
This takes only minutes to whip up but *must* be prepared a minimum of 3 hours before serving, longer is even better ;-) I have to say that I have made this using other brands of sweet relish, only Bick's relish seems to work best for this, you will see the difference if you use a different brand! My DH loves this with fish, but it also makes a great sandwich dressing too! Use only mayonnaise for this not salad dressing.
