½ teaspoon garlic powder
½ teaspoon salt
½ teaspoon ground black pepper
1 pound skinless, boneless chicken breast halves, cut into 1-inch cubes
3 tablespoons vegetable oil, divided
3 celery ribs, sliced
2 green bell peppers, diced
1 onion, chopped
½ cup ketchup
½ cup lemon juice
½ cup crushed pineapple with syrup
⅓ cup packed brown sugar

Steps:

  • Combine flour, garlic powder, salt, and black pepper in a shallow dish.
  • Roll and coat chicken cubes in flour mixture.
  • Heat 2 tablespoons vegetable oil in a skillet over medium-high heat.
  • Cook and stir chicken in hot oil until not longer pink in the center and juices run clear, 8 to 10 minutes; remove and set aside.
  • Heat 1 tablespoon vegetable oil in the same skillet over medium heat.
  • Cook and stir celery, green peppers, and onion in heated oil until slightly tender, about 5 minutes.
  • Return chicken to the skillet.
  • Whisk ketchup, lemon juice, pineapple, and brown sugar in a bowl; pour into the skillet; bring to a boil.
  • Cook and stir chicken and vegetables in sauce until heated through, 2 to 3 minutes.

After sifting through several recipes, I finally put this one together, and it is perfect for me. Just FYI, the pineapple...

1 c all purpose flour
5 chicken tenders, thawed
1/2 c ketchup
3 fluid ounces of pineapple juice
1/8 c sugar
1/4 c white vinegar
1-2 Tbsp salt (give or take, depending on personal preference)

Steps:

  • 1. To prepare the chicken: Place the raw chicken on a cutting board, one at a time, and cut them into 1 to 2 inch pieces (approximate).
  • 2. Place cut up chicken into a small mixing bowl. Pour the salt into the bowl with the chicken. Using your hands or a spoon, stir the raw chicken and salt together until the salt is well distributed.
  • 3. Add the flour. Using your hands, roll each peice of chicken in the flour until all the chicken is well coated with flour. Deep fry the chicken until thoroughly cooked and outside is golden.
  • 4. In another small mixing bowl, combine ketchup, pineapple juice, vinegar and sugar. Whisk until well mixed (about 30 seconds to 1 minute). The sauce will be thin.
  • 5. Heat a medium non-stick skillet on stove top. Keep heat between medium and low. Mix the fried chicken and sauce together in the skillet. Stir well, making sure that all the chicken is well covered in the sauce. Stir frequently.
  • 6. The longer the chicken and sauce cook together on the stove top, the more the sauce will thicken. Cook until the chicken is well heated through and through and appears to have absorbed a lot of sauce, and until the sauce thickens. This will usually take about 15 minutes. The sauce will also continue to thicken after the chicken and sauce have been removed from the heat. I never have to use anything else to make the sauce thicken. The sauce thickens very well.
  • 7. Enjoy plain or with steamed or fried rice and eggroles.

1 large red pepper, cut into thin strips
1 can (8 oz.) pineapple chunks in juice, drained
2 Tbsp. chopped PLANTERS Dry Roasted Peanuts

Steps:

  • Heat oven to 400ºF.
  • Insert tip of sharp knife into one short side of block of Noodles; use to split each block horizontally in half to make 2 layers. Place each layer on sheet of heavy-duty foil sprayed with cooking spray. Bring up sides of each foil sheet, leaving opening at top; place on rimmed baking sheet. I found a recipe via the net somewhere, I took the basic "idea" and added my own touches to it and came up with this fantastic tasting dish. The duck sauce is a MUST in this dish.

4 -6 boneless chicken breasts
4 -6 potatoes, cut in wedges
1/2 cup fat-free Italian salad dressing, to taste,i use wishbone,plus
1/4 cup fat-free Italian salad dressing, to taste,for marinating
1 -2 tablespoon italian seasoning

1 -2 tablespoon garlic powder
parmesan cheese
1 (10 ounce) bottle lachoy sweet and sour Chinese duck sauce

Steps:

  • Place the chicken breasts in a glass dish or bowl and cover with dressing, place in fridge and marinate overnight.
  • Drain the dressing off the chicken and discard.
  • Place the chicken in a 9x13 glass baking dish, placing them down the center of pan sprinkle the chicken with salt& pepper, garlic powder and Italian seasoning.
  • Peel and cut the potatoes into wedges and place them in a bowl.
  • Add some seasoning to the potatoe; italian,garlic powder, s&p toss well to coat potatoes.
  • Place the potatoes all around the breasts.
  • Top with little s&p if desired and lastly sprinkle the whole dish with parmesan cheese.
  • Bake 1 hr 400F or more till potatoes are tender.
  • Once you take it out of the oven, serve on individual plates, and top with duck sauce, (I just poured some on aprox 2-3 tbsp) You can warm the sauce up, I choose to leave it cold straight from fridge.

1 (10 ounce) bottle Kikkoman sweet and sour sauce
1 (8 ounce) can pineapple chunks
1 green pepper
1 sweet white onion
Pam cooking spray

Steps:

  • Preheat oven to 350°F.
  • Using a 3-quart baking dish, spray with a no-stick cooking spray, Pam.

Just a very simple way to get sweet & sour taste without all the hassle. I threw this together several years ago and everyone likes it. I made it for dinner last night and served it with rice and stir fried noodles and veggies and it just disappeared. I use contadina brand sweet & sour (important) because other brands just don't taste right. The chicken will fall off the bone it is so tender. Hope you enjoy.

6 -8 fryer chicken thighs
fresh cracked black pepper
seasoning salt
1/2 cup chicken stock
2 cans contadina brand sweet and sour sauce (16oz each)

Steps:

  • Pre heat oven to 350 degrees.
  • Rinse chicken thighs and place in an 8x8 glass dish or a casserole dish that is at least 2" deep.
  • Sprinkle with black pepper and seasoned salt on both sides to taste.
  • Add chicken stock.
  • Cover and place in oven and cook for 1hr & 15 minutes.
  • Remove from oven and drain juices from chicken.
  • Pour sweet & sour sauce over the chicken and cover again and cook for another 15 minutes to warm the sauce.

1 (8 ounce) jar apricot preserves or 1 (8 ounce) jar peach preserves
6 chicken tenderloins (unbreaded)

Steps:

  • cook chicken until it is done, boiling is quicker. ( may also use chicken with the bone in & skin on but will need to boil until cooked through then clean & seperate, for this method use either 4 thighs or 2 breasts).(use more chicken if feeding more than 3 persons, and increase amounts of salsa & preserves to make up the difference).
  • next add all the ingredients into a sauce pan and mix together, stirring frequently on med/high heat until boiling & slightly thickened. Remove from heat & let sit 4-5 minutes to let thicken more, then serve over rice or noodles & enjoy!
  • hot & spicy salsa gives a nice kick to this dish, try it you'll like it!
