EASY FREEZER SWEET PICKLES
I got this recipe from my mother-in-law, she has used it for 30 years and I will probably use it for 30 more!

Steps:
- Mix Cucumbers and Onions together and sprinkle with salt, mix well and let stand 2-3 hours.
- Rinse and drain well.
- Mix Vinegar and Sugar till sugar is dissolved.
- Put cucumbers and onions in freezer containers or freezer bags, pour vinegar/sugar mixture over cukes and onions (I only fill mine half full to leave room for expansion during freezing).
- Freeze 3 weeks before eating, the longer you let them sit the sweeter the pickles.
- Thaw in refrigerator or in cold water.

- 1. Put 1 Tablespoon of Pickling Spice, 1/4 Tsp. of Cinnamon and The Dill In The Bottom of A 1 Pint Mason Jar.
- 2. Then Add The Garlic Slices, The Onion Slices and Then Cucumber Sliced On Top Of The Spices.
- 3. Now Put the 4 Tablespoons of Water, The White Vinegar and The 12 Packets of Splenda Into A Small Pot and Heat to A Boiling Point and Remove from the Stove. Do Not Cool This Liquid, Pour It Directly Over the Top of The Cucumbers in the Jar Filling Almost to the Top, Leave About 1/2 to 3/4 Inch Space. Using A Towel to Hold The Jar (PLEASE BE CAREFUL - IT WILL BE HOT)Put The Inner and Outer Lid On The Jar and Screw Down Tighlty. Turn Jar Back and Forth 3 - 4 Times to Mix the Ingredients and Then Sit It Upside Down On It's Lid and Let Sit Until Jar Is Completely Cool to The Touch.
- 4. Then Refrigerate for 3 Days Before Opening to Cure. No Tasting Before They Are Done. They Will Be Good!
- 5. Note: The Longer They Stay In The Refrigerator, The Sweeter They Get.
EASY REFRIGERATOR SWEET PICKLES
I have never canned a thing in my life except pickled eggs (on JAP). My best friend has been canning away these pickles and can't keep up with everyone eating them. - 1. In a glass pitcher combine vinegar, water. Set aside.
- 2. Make sure jars are clean. In quart jar add 1 tsp of salt and a heaping tsp of sugar. In small pint jar add 1/2 tsp of salt and a tsp of sugar. Add seeds to both jars. Add a small amount of liquid. Close jar tight and swish jar to melt sugar and salt mixture.
- 3. Cut up cukes into chunks, spears, or slices. Put as many pieces as you can in jars. Fill both jars 1/2 way full with liquid and swish around. Take lid off and top off with the rest of the liquid. It's ok if it overflows. You want to make sure they are covered well. Place lid on top again and tighten well. Shake again. Place in refrigerator for 2-3 days. Every time you think to go ck them shake them. Eat and enjoy. Store in fridge for up to 3 weeks.

EASY SWEET PICKLES
I make a few jars at a time. This recipe is worth the 7 day wait, so plan ahead if making this recipe. These pickles remind me of my grandmothers 14-day pickles. I have tried this recipe with 6 gloves and the taste just isn't the same. If you don't care for gloves 6 cloves might be the route you take. Also, powdered cinnamon can be used in place of the cinnamon sticks. If you want to add the powder omit the cinnamon sticks and add 1/2 teaspoon of cinnamon. I have only used the cinnamon sticks. These pickles don't last long in this house and I hope they won't in yours either.

Steps:
- Drain pickles and reserve the liquid.
- Cut pickles into 1 inch chunks, return to the jar pickles came inches.
- Add the vinegar, whole cloves, and cinnamon to the jar of pickles.
- Add sugar alternating with a little pickle juice to the pickle jar, but make sure all sugar is added to the jar of pickles.
- Add only enough juice to cover pickles.

AWESOME & EASY SWEET PICKLES
This recipe was given to me by my Aunt Sally. It is a very simple way to make great sweet pickles. These have a bite and everyone loves them.

Steps:
- Completely drain the jar of dill pickles leaving pickles in the jar. Set aside.
- Bring all other ingredients to a hard boil.
- Immediately pour over the pickles in the jar.
- Recap tightly and turn jar upside down and allow to cool. (This should reseal jar so that they can be stored indefinitely).
- (I put all the spices, except for the garlic and the cinnamon stick, in a cheesecloth type bag. I press on the bag with a wooden spoon in vinegar/sugar mixture to get more flavor. It isn't necessary, but boiling the spices in a bag keeps them from floating around in the pickles).

- Place cucumber slices and onions in medium glass bowl. Set aside. Mix remaining ingredients in medium saucepan. Bring to boil on medium-high heat, stirring to dissolve sugar and salt. Reduce heat to low; simmer 5 minutes.
- Pour hot liquid and spices over cucumbers and onions. Cool slightly. Cover.
- Refrigerate pickles at least 2 hours before serving. Store in tightly covered container in refrigerator up to 2 months.
