SITTING HERE THINKING ABOUT TRUFFLES AND CAME UP WITH THIS. I HAVEN'T MADE THEM, BUT I AM GOING BY THE RED VELVET TRUFFLES.

Steps:
- MAKE CAKE ACCORDING TO PKG DIRECTIONS ADDING GREEN FOOD COLORING TO MAKE IT DARK GREEN.
- AFTER CAKE IS COOLED COMPLETELY, CRUMBLE INTO LG BOWL. ADD FROSTING TO MIX AND FORM INTO BALLS. PLACE IN FRIDGE FOR A WHILE TILL THEY ARE READY TO DIP.
- MELT VANILLA BARK ACCORDING TO PKG DIRECTION. REMOVE SOME MELTED BARK AND ADD GREEN FOOD COLORING TO IT. WHEN DONE DIPPING, DRIZZLE GREEN VANILLA BARK ALL OVER TRUFFLES.
- ****Add a little mint extract to them or how about some cocoa...
EASY ST PATRICK'S DAY TRUFFLES
There are so many versions of this easy truffle recipe. I just figured I'd do one for St. Patrick's Day. I have replaced the white chocolate chips with vanilla almond bark and they both work very well. You can customize this recipe for any occasion or holiday. Have fun and use your imagination! Here is a tip I learned from the original Kraft recipe for Oreo Truffles: Roll truffle ball in melted chocolate to coat. Lift truffle from chocolate using 2 forks (this will allow excess chocolate to run off) before placing it on the wax paper. Will post picture later.

Steps:
- Crush all of the cookies to fine crumbs in your food processor. (Cookies can also be finely crushed in a re-sealable plastic bag using a rolling pin.)
- Add softened (room temperature) cream cheese; mix until well blended.
- Roll cookie mixture into 42 balls, about 1-inch in diameter (I use a small cookie scoop).
- Set aside 1 cup of the white chocolate chips. Melt the remaining white chocolate in a microwaveable bowl, for 1 minute. If not completely melted, repeat at 15 second intervals, until melted.
- Dip balls in white chocolate; place on wax paper-covered baking sheet. (Any leftover chocolate can be stored at room temperature for another use.)
- Refrigerate until firm, about 1 hour.
- Melt the reserved cup of white chocolate chips in a separate small bowl and add a few drops of green food coloring to make a bright green mixture. Drizzle this mixture over the cooled cookie balls.
- Store leftover truffles, covered, in refrigerator.

- Cook brownies according to directions. Allow to cool completely. Make pudding according to directions. Once pudding is done, add in a few drops of green food coloring or until desired shade of green is reached. Take a zip-top plastic bag bag and place a few Oreo's inside. Seal the bag and smash the bag to crush the Oreo's. To assemble trifle; layer cut up brownies, a layer of pudding, a layer of cool whip, another layer of cut up brownie, a layer of pudding, and a few crushed Oreo's on top!! Chill in refrigerator until ready to serve! You can also use pistachio pudding if you don't want to use food coloring!
