A classic chicken salad recipe is always a favorite at a picnic, a barbecue, or an office potluck! Just a few ingredients can be transformed into a cold, creamy salad or filling for a homemade chicken salad sandwich or wrap!

2 cups cooked chicken (chopped)
½ cup mayonnaise
1 stalk celery (chopped)
1 green onion (diced (or chives or red onion))
1 teaspoon dijon mustard
½ teaspoon seasoned salt
pepper to taste
1 teaspoon fresh dill (optional)

Steps:

  • Combine all ingredients in a small bowl and mix well.
  • Season with salt and pepper to taste.
  • Serve as a sandwich or over salad.

This is a very simple but delicious chicken salad. It is sort of a clone of one that The Fresh Market makes. The first time I had it I made a Chicken Salad sandwich on Croissants. Number Of Ingredients 6

1.5 to 2 lb boneless chicken breasts or 1 shredded rotisserie chicken
1 tsp pepper
1 tsp garlic powder
1/4 c mayonnaise (your favorite -i like dukes or blue plate the best)
1 Tbsp grated or minced sweet onion (optional)
2 stalk(s) celery, finely chopped

Steps:

  • 1. SKIP STEPS 1 Through 7, if using rotisserie chicken.
  • 2. Preheat oven to 350 degrees.
  • 3. Season both sides of the chicken breasts with the salt, pepper and garlic powder.
  • 4. While seasoning the chicken, heat an oiled oven-proof skillet over medium-high heat. .
  • 5. Add chicken breasts to hot skillet, cook 3-4 minutes or until lightly browned. Flip chicken and repeat on other side.
  • 6. Once both sides are lightly browned, take skillet off of heat and slide into preheated oven. Bake for 15-20 minutes, or until cooked throughout.
  • 7. Once chicken is out of the oven and has cooled slightly, cut each breast in half and shred them with 2 forks, OR place them in the food processor, (or shred them with 2 forks). Pulse 8-10 times, or until chicken is shredded or chopped to your liking.
  • 8. Place chicken-either baked or rotisserie - in bowl with chopped celery and mayo; stir well. Season to taste with additional salt and pepper or more mayo if you like an extra creamy chicken salad.
  • 9. Enjoy as a salad on lettuce leaves, OR on bread, Croissants or wrapped in lettuce leaves for a tasty sandwich; OR enjoy it spread on crackers or apples for a yummy snack or hors d'oeuvres.

My husband and our friends absolutely love my chicken salad! I originally got the recipe from my father, but have adapted it slightly. Very easy to make and great on crackers, sandwiches, etc. You can also substitute turkey and make turkey salad - it tastes just as great! This recipe can be halved for a smaller batch.

2 (12 1/2 ounce) cans white meat chicken breasts (drained)
8 hard-boiled eggs (peeled)
2 cups mayonnaise
1 cup yellow mustard
1/2 cup dill relish
1 teaspoon salt (more or less to taste)
2 teaspoons black pepper (more or less to taste)
1 tablespoon onion powder
1 tablespoon garlic powder

Steps:

  • In a large mixing bowl, use a fork to break down the large chunks of chicken.
  • Break the eggs apart with your hands by squeezing and crumbling them into the chicken.
  • Add all remaining ingredients.
  • Stir with a spoon until well mixed.
  • Refrigerate at least 30 minutes before serving.
