EASY CINNAMON CHIP SCONES

¾ cup butter
3 ¼ cups all-purpose flour
⅓ cup white sugar
2 ½ teaspoons baking powder
½ pinch baking soda
½ teaspoon salt
1 cup buttermilk
1 (10 ounce) package cinnamon baking chips
2 tablespoons butter, melted
2 tablespoons white sugar

Steps:

  • Place 3/4 cup butter into the freezer for 1 hour. Cut into cubes.
  • Preheat the oven to 425 degrees F (220 degrees C).
  • Combine flour, 1/3 cup sugar, baking powder, baking soda, and salt in a large bowl using a whisk. Cut in very cold cubed butter with a pastry blender or using your fingers until you get coarse crumbs.
  • Create a well in the flour mixture; add buttermilk and stir gently until dough is just moistened. Fold in cinnamon chips.
  • Turn dough out onto a lightly floured surface. Knead gently until dough is no longer sticky, 10 to 12 times, and divide in half. Pat or roll each portion gently into a 7-inch circle. Brush melted butter over circles. Sprinkle each with 1 tablespoon sugar. Cut each circle into 6 wedges. Separate and place scones on an ungreased baking sheet.
  • Bake in the preheated oven until lightly browned, 10 to 13 minutes. Serve warm.

350g self-raising flour, plus more for dusting
¼ tsp salt
1 tsp baking powder
85g cold butter, cut into cubes
4 tbsp golden caster sugar
150g pot natural full-fat yogurt
4 tbsp full-fat milk
1 tsp vanilla extract
1 egg beaten with 1 tbsp milk, to glaze

Steps:

  • Put a baking sheet in the oven at 220C/200C fan/gas 7. Put the flour, salt and baking powder into a food processor, then whizz in the butter until it disappears. Pulse in the sugar, tip into a large bowl, then make a well in the middle.
  • Warm the yogurt, milk and vanilla together in the microwave for 1 min or in a pan; it should be hot and may well go a bit lumpy-looking. Tip into the bowl and quickly work into the flour mix using a cutlery knife. As soon as it's all in, stop.
  • Tip the dough onto a floured surface, then, with floured hands, fold the dough over a few times - just enough to create a smoothish dough. Press out to about 4cm/1½in thick, dip a 7cm cutter into more flour, then stamp out 4 rounds, flouring the cutter each time. Squash the remainder lightly together, then repeat until the dough is used up. Brush tops with egg wash, scatter flour over the hot sheet, then lift the scones on. Bake for 12 mins until risen and golden. Best eaten just-warm, or on the day.

2 tablespoons butter
1 pinch salt
½ cup shredded Cheddar cheese
1 clove garlic, minced
1 cup milk

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Lightly grease a baking sheet.
  • In a large bowl, sift together flour and salt. Rub in butter lightly with finger tips until mixture resembles coarse breadcrumbs. Stir in cheese and garlic. Make a well in the center of the mixture and pour in the milk, reserving 1 teaspoon for a glazing the scones. Gently mix, just until combined.

I made these up this morning when we were looking for a different flavour of scone for breakfast. I forgot to put sugar in the scones, so I sprinkled the top with Demmara Sugar - and I like them better that way! It adds a nice crunch on top. These are not your typical buttery scone - these are more of a hearty, healthy, and hold you till lunch kind of scone! If you don't have cinnamon chips, add a tbsp or two of brown sugar and increase the cinnamon to 1 tsp to compensate.

  • Preheat oven to very hot- 225 degrees C.
  • Mix flour, cheese, milk and salt together until combined.
  • The mixture is fairly moist and sticky.
  • Put about a rounded tablespoon of mixture onto a greased tray.
  • Makes 10- 12 scones approx.
  • Sprinkle on the paprika if you wish.
  • Bake for about 15 minutes.
  • I turn the tray round half way through cooking for an even result.
  • Best served warm- split and serve with butter (optional).

500g self-raising flour, sieved, plus extra for dusting
175g softened butter, cut into small pieces
3 tbsp caster sugar
150g sultanas
2 eggs, lightly beaten
a splash of milk, plus extra for brushing
clotted cream and jam, to serve (optional)

Steps:

  • Heat the oven to 220C/200C fan/gas 7. Line a large baking tray with baking parchment. Tip the flour and butter into a large bowl. Gently start to rub the butter into the flour using your fingertips, allowing it to fall from a short height above the bowl. This will incorporate air into the scones, making them beautifully light. Continue doing this until the mixture resembles fine breadcrumbs.
  • Add a pinch of salt, the sugar, sultanas, eggs and enough milk to bring the mixture together into a soft dough. The amount of milk will vary accordingly to the size of the eggs, softness of the butter and temperature of the room. Be careful not to overwork the tough or it will become tough.
  • Turn the dough out onto a lightly floured surface. Generously flour a rolling pin and roll the dough out to a 2cm thickness. Cut into squares or triangles using a sharp knife, then transfer the scones to the prepared baking tray, spacing them apart to leave room for spreading. Brush the tops with a little milk, then bake for 10 mins. Leave to cool until just warm, then serve with clotted cream or butter and jam, if you like.

I just got this recipe from a cooking magazine which was sent in from a reader. They are fat free, dairy free, egg free, super easy and cheap to make, having only to buy the soup. Delicious spread with butter!

3 cups self raising flour
420 g condensed pumpkin soup (I use 99% fat free)

Steps:

  • Preheat oven to 200 degrees Celsius.
  • Place the flour in a medium bowl and make a well in the centre.
  • Pour the soup in and mix with a knife until the dough comes together.
  • If the dough is too dry add some water, if it is too sticky add some more flour.
  • Turn out onto a floured mat and knead lightly.
  • Pat out to 1 inch thickness and use a scone cutter to cut out rounds.
  • Place on a greased baking tray and bake in oven for 10 - 12 minutes Serve warm.

2 cups original Bisquick baking mix
1/2 cup semi-sweet chocolate chips
1/3 cup whipping cream (heavy)
3 tablespoons sugar
1 egg
1 teaspoon vanilla
additional whipping cream (heavy)
additional sugar

Steps:

  • Heat oven to 425°F Spray cookie sheet with cooking spray or grease with shortening. Stir Bisquick mix, chocolate chips, 1/3 cup whipping cream, 3 tablespoons sugar, the egg and vanilla in medium bowl until soft dough forms.
  • Pat into 8-inch circle on cookie sheet (if dough is sticky, dip fingers in Bisquick mix). Brush circle with additional whipping cream; sprinkle with additional sugar. Cut into 8 wedges, but do not separate.
  • Bake about 12 minutes or until golden brown; carefully separate. Serve warm.
  • High Altitude (3500-6500 ft) No changes.
