¼ cup butter
1 large onion, diced
2 apples - peeled, cored, and diced
2 (6 ounce) boxes dry stuffing mix
2 ½ cups boiling water, or more if needed
1 pound bulk pork sausage

Steps:

  • Heat butter in a skillet over low heat; cook and stir onion until slightly tender, about 5 minutes. Add apples to onion and cook until onion and apples are tender, 5 to 10 minutes more.
  • Mix stuffing mix and boiling water together in a bowl. Cover bowl and let sit until water is absorbed, about 5 minutes. Add more water if stuffing is too dry.
  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.
  • Mix sausage and onion-apple mixture together with the stuffing.

It wouldn't be the holidays without it! My mom's recipe and an easy holiday tradition using packaged stuffing mix. The first steps can be done ahead of time and refrigerated.

4 celery ribs
1 white onion
1/2 cup butter
1 lb bulk pork sausage
1 (16 ounce) package crumb seasoned stuffing mix, like pepperidge farms
1/4 teaspoon sage, no more
1 cup chicken broth

Steps:

  • Prepare a small dice of celery and onion, and saute with butter until soft.
  • Remove from pan and reserve. Add crumbled sausage to pan and cook through.
  • Drain sausage on paper towels and combine with celery mixture. This can now be refrigerated until you are ready to stuff the turkey.
  • When you are ready to stuff the turkey combine celery mixture, sausage, stuffing mix and sage in a large bowl.
  • Add chicken broth a little at a time just until stuffing is moist, not mushy or runny.
  • Rinse turkey and empty the cavity. Place turkey in roasting pan.
  • Fill the body cavity with stuffing mixture. Also fill the cavity at the neck under the skin with stuffing. Pat any additional stuffing between the turkey legs. Prepare turkey as desired.
  • To cook in a casserole dish instead of stuffing the turkey, place stuffing mixture in a greased casserole dish and bake according to package directions. If stuffing is drying out dot with butter and add small amounts of broth to moisten.

8 cups unseasoned stuffing cubes
1/2 cup unsalted butter
1 1/2 cups diced yellow onions (from 1 large or 2 small onions)
1 cup diced celery (from 3 celery stalks)
4 garlic cloves, finely chopped
1 lb bulk sweet Italian sausage
2 3/4 cups low sodium chicken broth
1 large egg, beaten
1 tablespoon chopped fresh rosemary
1 tablespoon chopped fresh sage
1/4 cup chopped fresh parsley
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper

Steps:

  • Preheat oven to 350. Grease a 9x13 inch baking dish with butter.
  • Place the stuffing cubes in a large mixing bowl.
  • In a large saute pan, melt the butter. Add the onions and celery and cook over medium heat, stirring occasionally, for about 8 minutes, or until the vegetables are soft.
  • Add the garlic and cook 2 minutes more. Add the vegetables to the stuffing cubes. Don't wash the pan but scrape out every last bit of vegetables, otherwise they will burn in the next step.
  • In the same pan, cook the sausage over medium heat for 8 to 10 minutes, until browned and cooked through, breaking up the sausage with a metal spatula while cooking (the largest pieces should be no greater than 1/4 inch). Add the browned sausage and fat to the bread cubes and vegetables.
  • Add the chicken broth, egg, rosemary, sage, parsley, salt, and pepper to the bread cube mixture and mix until the bread is soft and moistened. Transfer the stuffing to the prepared baking dish and bake for 65 to 75 minutes, uncovered, until deeply golden and crisp on top.

Pepperidge Farm Herb Stuffing (the crumbled kind not the cubed kind)
1 package Jimmy Dean sausage
1 large onion (chopped)
6 -8 celery ribs (chopped)
1 egg
1 3/4 cups chicken broth

Steps:

  • Follow the directions on the stuffing bag.
  • Substitute chix broth for water.
  • Before adding liquid, add sausage (cooked and crumbled).
  • Add onion, celery, and beaten egg.

1/2 onion, diced
1/2 red bell pepper, diced
2 chicken bouillon cubes, dissolved in 2 cups boiling water
2 minced garlic cloves
2 tablespoons butter
2 tablespoons olive oil
5 -6 corn muffins, about 3 inches in diameter

Steps:

  • Melt the butter with the olive oil over medium heat. Saute the onions and peppers until soft and translucent.
  • Add the garlic and sausage, cook for another 1 to 2 minutes, stirring frequently.
  • Remove from heat, slowly add the chicken bouillion broth to moisten the mixture to your liking. I used about a cup and a half. Serve.

My family does not like pieces of onion or celery stuffing so this is a delicious way to make a stuffing without them. You can cook this inside the bird or out or both!

1 lb breakfast pork sausage
1 (14 ounce) package herb seasoned stuffing mix
3 -4 cups chicken broth (start with 3 cups and keep adding until your desired moistness.... I use all 4 cups)
1/2 cup butter, melted
1 teaspoon garlic powder
1/2 teaspoon onion powder
1 teaspoon salt
1/4 teaspoon ground black pepper

Steps:

  • In a large skillet over medium heat, crumble sausage and cook, stirring occasionally until sausage is brown.
  • Place stuffing mix in a large bowl. Add sausage, including drippings (leave out drippings for lower fat but it's good with the drippings in!).
  • Add garlic powder, onion powder, salt and pepper. Mix well.
  • Pour broth and butter over the top and toss to combine.
  • Spoon mixture into a greased 9x13 inch baking dish; cover. Bake at 350 degrees F for 45 minutes.
  • OR Stuff neck and body cavities lightly with stuffing and cook turkey as directed. Spoon any remaining stuffing into separate greased baking dish. Cover and refrigerate stuffing until ready to bake. Add the baking dish with remaining stuffing to oven for the last 30 minutes of cooking the turkey.
