JUNIOR MINT BROWNIES (LOW FAT) image

1/4 butter
32 Junior Mints
1 c all-purpose flour
1/4 tsp baking soda
1/8 tsp salt
2/3 c sugar
1/3 c unsweetened cocoa
1 large egg
1 large egg white

Steps:

  • Preheat oven to 350. Coat bottom of 8-inch square baking pan with cooking spray. Combine butter and mints in 2-cup glass measure; microwave at high for 30 seconds or until soft; stir until smooth and set aside. Combine flour, soda and salt in bowl. In an electric mixer, beat at medium speed the sugar, cocoa, egg, and egg white until well blended. Add mint mixture and beat well; add flour mixture and beat at low speed just until blended. Bake for 20 minutes. Cool completely in pan on wire rack.
