EASY SALMON LOAF
This is an old, old recipe from my Aunt Jeanie-Beanie. I loved this one as a kid and my family enjoys it now.

Steps:
- To make Salmon Loaf: Add milk and breadcrumbs to a bowl; stir to combine; set aside.
- In another bowl beat the egg yolks until thick and the color of lemons.
- Add in the breadcrumb mixture, lemon juice, salts, and pepper; stir to combine.
- Add in salmon; stir to combine; set aside.
- In yet, another bowl, beat the egg whites until stiff but not dry; add to the salmon mixture; fold in gently.
- Spoon mixture into a greased 7 1/2 x 3 x 2 inch loaf pan.
- Bake at 400°F for 35 minutes.
- In the meantime, make white sauce: let the butter melt in a saucepan over low heat.
- Add in the flour and stir until smooth.
- Cook for 1 minute while stirring constantly.
- Gradually pour in the milk; cook over medium heat and stir constantly until mixture is thickened and bubbly.
- Add in salt and pepper to taste.
- Cut salmon loaf into slices and serve with white sauce on top.

- Add flour
- Cook 1 minute, stirring constantly.
- Gradually add milk and cook over medium heat until thick and bubbly.
- Add salt and pepper.

BAKED SALMON LOAF - EASY LENT ENTREE - THAT SKINNY CHICK CAN BAKE
This Baked Salmon Loaf has been an easy Lenten staple since my mother-in-law served it to us when we were newlyweds.

- Grease loaf pan and set aside.
- Whisk eggs in a medium bowl.
- Mix in melted butter, milk, and salt.
- Break apart salmon into bite-sized or slightly larger pieces.
- Add bread and salmon to the bowl and gently toss until combined.
- Scrape into the loaf pan.
- Bake for 45- 60 minutes until puffed and lightly browned.
EASY CROCK POT SALMON CHEESE LOAF
You can cook this recipe in the crock pot as directed, but also comes out well when cooked in conventional oven at 350 for 25 minutes.

- Flake fish in bowl, removing all bones.
- add all remaining ingredients, except peas, and mix thoroughly.
- pour into lightly greased crock pot or casserole dish and shape into rounded loaf.
- cover and cook on high 1 hour then low 3 to 5 hours.
- add peas around the loaf during last hour.

- Drain salmon and flake/remove bones.
- Combine with the rest of ingredients.
- Shape into a loaf and place in greased pan or casserole dish.
- Bake at 350 for around 40 minutes.
EASY SALMON LOAF
Steps:
- Preheat oven at 350 degrees F. Grease a loaf pan and set aside. Blend salmon and egg then stir in remaining ingredients.
- Spoon lightly into greased pan. Pat into shape.
- Bake 45 minutes until top is golden brown and crisp.
