PALLOTTE DI FORMAGGIO (CHEESE BALLS) image

Number Of Ingredients 6

1 lb of Parmesan Cheese, grated and placed in a large bowl.
2 Eggs, lightly beaten and added to the grated cheese
3 Slices Italian Bread 2 days old, crumbed and add to the cheese and egg mixture and combined together. (Add more bread if needed to have a workable consistency.)
1 Bunch of Fresh Italian Flat Parsley finely chopped, add to mixture.
1 clove of Garlic finely chopped and added to mixture.
1 cup of Olive Oil set aside for frying.

Steps:

  • Mix all ingredients together except for the Olive Oil.To avoid the mixture from sticking to your hands rub a small amount of Olive Oil in your hands, repeat as need. Form the Cheese mixture in golf size balls in the palm of your hand. Place the Cheese Balls on a plate to then transfer to a heated at least 2-inch deep Heavy Skillet. Heat the skillet with the Olive Oil until it slightly boils, careful not to overheat. Add the Cheese Balls in the heated oil and cook to a golden brown, turning the cheese ball to have an even golden brown. Once golden brown remove and place on a clean plate lined with paper towel to absorb any extra oil. **Optional for serving: After frying to a golden brown you may want to have the Cheese Balls slow cook in a Red Marinara Tomato Sauce for at least 20 minutes and serve with your favorite Pasta. Or just enjoy the Cheese Ball next to a Mixed green salad.
