This is an easy recipe for a rum-soaked cake filled with walnuts and a rum glaze.

1 cup chopped walnuts
1 (18.25 ounce) package yellow cake mix
½ cup dark rum
4 eggs
½ cup water
½ cup vegetable oil
1 (3.5 ounce) package instant vanilla pudding mix
½ cup butter
⅛ cup water
½ cup white sugar
¼ cup rum

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 10 inch tube or Bundt pan. Sprinkle nuts over the bottom of the pan.
  • Mix together the cake mix, 1/2 cup dark rum, eggs, 1/2 cup water, oil, and vanilla pudding mix. Pour batter over the nuts in the pan.
  • Bake for 1 hour. Cool, and invert cake on a serving plate. Prick the top of the cake.
  • To Make The Glaze: Melt the butter in a saucepan. Stir in 1/8 cup water and the 1/2 cup sugar. Boil for 5 minutes, stirring constantly. Remove glaze from heat, and stir in 1/4 cup rum. Drizzle and smooth evenly over the top and sides.

Cake:
1 cup chopped pecans or walnuts
1 box yellow cake mix (I like Duncan Hines)
1 box (3 oz.) Jell-O Vanilla Instant Pudding and Pie Filling
4 eggs
1/2 cup cold water
1/2 cup canola oil
1/2 cup dark rum
Glaze:
1/4 pound butter
1/4 cup cold water
1 cup sugar
1/2 cup dark rum

Steps:

  • Preheat oven to 325°F. Grease and flour a 10 inch or 12 cup Bundt pan. Sprinkle nuts over the bottom and sides of pan.
  • Combine cake mix, vanilla pudding, eggs, water, oil and 1/2 cup rum. Mix well and pour over nuts in pan.
  • Bake for 1 hour or until cake tests done. Remove from oven, prick the cake and pour some of the glaze. Invert over serving plate and pour the rest of the glaze over, until all has been absorbed.
  • For Glaze: melt butter, stir in water and sugar. Boil 5 minutes, stirring. Remove from heat and stir in rum.

I got this recipe from a friend in the States. It's so easy, and really good, but you should limit servings or you'll be wiping your guests off the floor!

1 Duncan Hines yellow cake mix
1 (250 g) package vanilla wafer cookies
4 eggs
1/2 cup vegetable oil (safflower, soy, etc)
1/2 cup rum
1/2 cup water
1/4 cup water
1/2 cup rum
1/4 lb butter
1 cup sugar

Steps:

  • CAKE: Mix the above together and bake in a prepared bundt pan for 1 hour at 325 F.
  • GLAZE: Boil the water, butter and sugar together for 5 minutes.
  • Add the rum and drizzle this over the HOT rum cake until it is all absorved.
  • It helps to punch holes in the cake with a fork--gently now.
  • Let this cool before serving.

My daughters gave me a copy of Rachel Ray's 30 Minute Meals 2 Cookbook and of course the first thing I tried was a dessert! Her recipe actually called for double the rum quantity but I found it way too strong so I have halved that measurement.

8 ladyfingers
1 1/2 fluid ounces rum
2 cups prepared vanilla pudding
8 large juicy ripe strawberries, sliced
1 teaspoon sugar
1 (2 ounce) package almonds, sliced (I would toast them next time)
Cool Whip or heavy cream

Steps:

  • Separate 8 ladyfingers on work area.
  • Using a pastry brush, paint the ladyfingers with the rum as mentioned, I have halved this original qty- her recipe calls for 3 oz.
  • Line small glass dessert cups with the ladyfingers.
  • Top with heaping spoonfuls of prepared vanilla instant pudding (about 1/2 cup) per dish.
  • Sprinkle sliced strawberries with sugar and toss to coat.
  • Top the dessert cups with the strawberries and a dollup of coolwhip/heavy cream and sprinkle with almonds.
  • Serve, or chill until dessert time.
  • Enjoy!

I'm sure there are better variations on the stout cake theme, but I doubt there's any easier, and it turned out awfully good. If you take nothing else from this recipe, do try the frosting idea. I'm sure it work as well with bourbon or any other sweet alcohol, such as wine or brandy. * Food.com required sizes on the cake mix and frosting, so I guesstimated, but they were your standard Betty Crocker/ Pillsbury type cake mix and frosting containers.

1 (16 ounce) box cake mix
12 ounces stout beer (I used a chocolate stout)
2 eggs
2 tablespoons oil
1 (12 ounce) can chocolate frosting
4 -6 ounces dark rum

Steps:

  • Prepare and cook the cake according to the package's directions, allow to cool and refrigerate long enough to allow the cake to solidify somewhat, 1-2 hours. This step makes it much easier to handle and slice prior to icing it.
  • Empty the can of frosting into a bowl large enough to give you some elbow room to stir the rum in, and add rum and whisk a little at a time. I'm only estimating, but I think I ended up adding about 4 ounces, and it produce a really smooth, creamy, easy to spread frosting.
  • Frost the cake per your liking. I took the step of slicing it across so I could have a layer of frosting in the middle. Enjoy!

  • Whip cream.
  • Fold in crumbled chocolate bars and rum.

1 pkg vanilla pudding
1/2 c vegetable oil
4 eggs
1/2 c water
1/2 c preferred rum
GLAZE
1/4 lb butter
1/2 c water
1 c sugar
1/2 c preferred rum

  • 1. Preheat the oven to 325 degrees. Grease and flour bundt pan.
  • 2. Mix cake mix, pudding, eggs, water, oil and rum and Bake for 1 hour.
  • 3. While cake is cooling melt the butter for glaze in a sauce pan, stir in sugar and water. Allow it to boil for 5 minutes. Remove from heat and stir in rum.

sauce for cake:
1 stick butter
1/4 c rum
1 c sugar
1/4 c water

  • 1. Combine all ingredents and beat with mixer for 3 minutes.
  • 2. pour into greased bundt pan. Bake 1 hour at 350 degrees.
  • 3. While cake is baking make sauce, bring sauce to boil for 3 minutes.

1 package (4-serving size) vanilla instant pudding mix
4 eggs
1 cup water
1/2 cup (1 stick) butter, softened
2 tablespoons McCormick® Imitation Rum Extract
1/2 cup sugar
1/4 cup (1/2 stick) butter
2 tablespoons water
1/2 teaspoon McCormick® Imitation Rum Extract

Steps:

  • Preheat oven to 325°F. For the Cake, sprinkle pecans evenly in bottom of greased and floured 12-cup Bundt pan. Mix cake mix, pudding mix, eggs, water, butter and 2 tablespoons rum extract in large bowl with electric mixer on low speed 30 seconds. Beat on medium speed 4 minutes. Pour into prepared pan.
  • Bake 1 hour or until cake begins to pull away from sides of pan. Cool in pan 15 minutes.
  • Meanwhile, for the Glaze, mix sugar, butter and water in small saucepan. Stirring constantly, bring to boil on medium heat and boil 1 minute. Remove from heat. Stir in 1/2 teaspoon rum extract. Invert cake onto serving platter. Pierce cake with fork. Spoon glaze over warm cake.
